Goose for Christmas?

Not too keen on turkey as a family and thinking of goose to ring the changes - not that there hasn't been enough change this year!

But I've never tried goose! What is it like? How would I cook it?

We always do, much richer and more flavourful than turkey! You roast it in the oven same as any other bird, I find it doesn't need stuffing as it's rich and moist enough without (you can cook stuffing separately so as to still have some!). the only tricky part is catching and saving the fat that comes off it while cooking - you should get enough from a large bird for several lots of goose fat roast potatoes which are delicious! Worth the goose for them alone...

I love goose and have cooked it a few times for Christmas.

Potatoes cooked in goose fat are delicious.

BUT

The fat, my god the fat. I think I have to check and drain the fat every 30mins or so making it a bit of an arse to cook.

When we had one there was less meat on it than we were expecting. Kind of like duck.

It’s lovely but the rib cage is very big so a lot less meat on it but the bird itself is huge. It’s hard to feed a lot of people with a goose unless you can run a couple of ovens. It’s probably a good choice this year if you are a small party for Christmas Day!

Bigger than duck but the carcass is bigger so you don't get as much meat as on a turkey of a similar weight.

We love goose but they are big for not much meat on them. We now do ducks. - lovely & tastier than turkey . & a ham But yes - the draining of the fat for goose as @phoenix21 says

We have a Goose every year, I prefer it to Turkey. I'd never tried it til I got married but DHs family had it every year.
We do a Turkey too though. DH cooks the Christmas dinner so I can't help with advice there, but I know it goes on a rack so the fat can drip out whilst it's cooking. It's delicious, doesn't go far but is well worth it

We have goose every year - we usually get a 5kg goose, and I get five adult portions on Christmas Day, plus another five adult portions of shredded goose to have as left overs (I mix it with soy sauce, runny honey and rice spice, dry fry it until sticky, and serve with rice).

As other poster have said - goose is delicious, and the goose fat that renders off during cooking makes wonderful roast potatoes.

I find they always come with the giblets, and I use them to add extra flavour to the duck stock I make in the months running up to Christmas. It is also worth checking inside the cavity, and pulling out the loosely attached fat you may find in there - I render that down in a pan to add to the goose fat dripping for the roasties (plus it makes gorgeous dripping toast - just a scrape of the dripping and some sea salt).

Very pleasant. Whatever you choose, just think how many meals it will cover- the old OXO advert with the family having turkey for several days comes to mind.
