Bacon. How do you like yours and where do you buy it ?

First of all, apologies to the MN vegetarian community who may not care for this thread.

I've never bought middle bacon (don't know why) but I usually buy unsmoked dry-cure back bacon from a local butcher. Occasionally from the supermarket. I used to go to a pork butcher at a monthly farmers' market but the quality slid after a while and never recovered. The beauty of the butcher is having some choice in which joint it comes from and how thickly or thinly sliced it is. I appreciate not everyone has the luxury of choice. I trim most of the rind off and render it down - great for fried eggs or mushrooms. The bacon itself I fry in a pan or cook in a slotted pan (skillet). I've never done oven-baked bacon - I think it's what hotel breakfast buffets do - but I shall try some day.

Bacon chops are great with sausages and hash browns. Grilled smoked streaky bacon makes the best sandwiches.

Like Denise Royle. Dead, dead crispy.

Streaky, on thick cut white bread, jersey butter and a poached egg. Served with builders tea and twenty napkins.

I like smoked dry-cure back bacon. If I can’t get to the farmers’ market to buy direct from the producer, I buy from M&S.

I like smoked back bacon, but the thicker slices. Cooked in the oven until the fat is crispy and caramelised.

Undercooked, pink, flabby bacon is an abomination.

Usually buy Ocado own brand, but we sometimes have a butcher's delivery and order more expensive bacon as a treat.

Has to be good quality white bread.

I'm probably the odd one out here then! Always unsmoked bacon, grilled until crispy but not so that you can snap in half. Served in buttered toasted bagel with a potato scone.

Bacon chops with scrambled eggs and bubble and squeak is a good evening meal. I sometimes put slivers of smoked streaky bacon on pizzas but it has to be at least partly cooked coz it won't cook properly from raw with the pizza.

Unsmoked organic back bacon thick cut. Either from the butcher or our organic farm box. Grilled with crispy fat in a bacon sandwich please. Tomato sauce, not brown

smoked back bacon the one from aldi is acceptable i dry fry it in a griiddle pan on ciabbata rolls , but if im doing american pancakes with fried egg and maple syrup its got to be smoked streaky cooked crispy
