What to do with Diced Beef

So I got diced beef out last night....and I have no idea what to do with it....

It's the same everytime tbh. I buy it, think oh that'll be a nice change. Shove in freezer....get it out once day....remember partner doesn't like stew...debate leaving him and cooking stew...decide that's a lot of hard work and I should find something else. Make a jar curry which would have been better as chicken. Beef is tough and wasted.

So what should I cook....I do have a slow cooker and I'm working from home so can get that on if needed. Unfortunately...not stew or casserole (but hotpots are apparently okay Hmm HmmConfused)

Steak and ale pie - slow cook it with onions, ale and beef stock, then puff pastry on top. Delicious!

Chilli but cook low in the cooker for 2 hours rather than the slow cooker, the sauce goes thicker and the beef goes softer.
Or Gordon Ramsey’s beef bourginon is really good with mash and now I’m going to have to make it Grin or cook it in beer with loads of mushrooms and put a pastry lid on it.
Can you tell I’m doing the 16/8 and am ready to eat Blush

Thanks all for the ideas. I've always used mince for chilli but a proper chunky one sounds yummy. I have plenty of beans so think I'll do that.

Goulash sounds good as well so maybe will save for another day.

As for the difference between stew and hotpot... apparently there is one I'm yet to determine. Aside from technicalities and hotpot is meant to have a potato top...the actual base. No idea...but I'm assured there is a difference that as yet I'm unable to replicate...have a sneaking suspicion he's mixing it up with some strange version of hunters chicken....

Tbh, most people use the terms interchangeably but technically a stew is cooked on the hob and a casserole in the oven.
My mum.used to make stew, it was always far too watery and the meat was tough. Casseroles are cooked long and slow so the flavours melded and the meat is tender.

Lobby.
2 oxos, beef, carrots, leeks/onion, cubes of potato and any other root veg you like, plenty of water. Stick it all in a big pan, bring up to the boil then turn it right down for at least 4-6 hours, it’s better the next day. You can add dumplings too and thicken it if you like.
NO slow cooker though, it doesn’t taste right at all.

Crusty bread and butter with it.

Coat with flour and season then shove it in the slow cooker with onions, mushrooms if he likes them and a glass of wine and an oxo cube or splash of worcestershire sauce. Serve with mash and greens.

Does your DP like casseroles? I'm not a fan of stew but love a casserole. Long slow cooking is the key.
