I found a great recipe for pork shoulder which is a really cheap cut of pork. The long cooking time makes it insanely tender.
1.75kg pork loin OR shoulder, skinless
1 tbs oil
2 tsp EACH paprika, thyme
1 tsp EACH garlic powder, onion powder
1/2 tsp cayenne pepper , optional
1/2 tsp ground black pepper
1 tsp salt
HONEY BUTTER SAUCE:
1/3 cup honey
Large knob of butter ,
3 cloves garlic , minced
1 tbs cider vinegar
THICKENER:
3 tsp cornflour.mixed with splash of water
Sear the pork in oil on the hob over a very high heat to brown. Stir in all the herbs and spices, and fry for a minute or two.
Tip all this lot into the slow cooker and add the ingredients of the Honey Butter sauce.
Leave it in the slow cooker on low setting for 7 or 8 hours. At the end, remove the pork. Taste and thicken the sauce - if you don't like it or find it too strong, mix the sauce with some ordinary pork gravy granules and hot water
Serve with mash and green veg eg kale
