What's for lunch?

I'm so bored of sandwiches and salads, can anyone give me some interesting but healthy lunch ideas?
I work from home on Mondays and then in work 3 other days a week so don't mind doing a bit of batch cooking so I can take stuff into work.
Inspire me!Smile

Well my lunch is eggs benedict and Prosecco, so not exactly healthy!

This time of year I make lots of soups - chorizo & butterbean, roast pumpkin & sage, chilli miso with noodles etc.

Also the ready cooked lentil packs you stick in the microwave are great. I steam some fish and greens and poo them on top of the lentils. Take about 10 mins start to finish.

Rice cakes with ham and cheese. Just been diagnosed with coeliac disease so trying to figure out what to eat without the use of bread as I haven't found a gluten free bread I like!

I've just made soup so will have that today and tomorrow and freeze the rest. I've got about 15 takeaway containers of soup in the freezer at the mo so just take one out for lunch each day. I am a bit of a creature of lunchly habit in autumn and winter.

Soup is great at this time of year plus really quick and cheap to make. And leftovers from the night before. Now I’m working from home I’ll sometimes make an omelette or jacket potato, and occasionally a bacon sandwich!

Thanks everyone - soups are definitely the way forward in autumn. I have a cupboard full of different beans and lentils as well.
I'm trying to think of interesting things to put into pitta breads or wraps as well..

You could make (or buy) hummus and use the pitta or wraps to dip with some cucumber or celery sticks.

Today we had homemade roasted red pepper & tomato soup, using some of our millions of tomatoes that had grown in the garden! Very healthy, very quick & easy to make.

Well I've made minestrone soup this evening so I will have plenty left over for work tomorrow.
Today was an omelette made with peppers, onion, peas, tomato, ham and a small sprinkling of cheese.
Later in the week I plan on having jacket potato with cottage cheese and salad and am inspired to use some of the kids left over chicken nuggets - I'm going to put those in a wrap with lettuce, tomato and a bit of mayo.
