Subway 'bread' is not proper bread, in Ireland at least.

Well done Ireland! there is absolutely no reason for sugar to be added to bread, it's just another way hidden calories are being added to everyday food.

I've eaten at Subway twice. Once because I didn't know any better and the second time to check whether the abomination I was sold the first time was a one off or not.

Their stupid names for the different types of bread and all the questions are also very offputting. What's wrong with just asking for a ham salad sandwich on white and them making it without forcing you into a game of 20 questions.

I don't add 10% of the weight of the flour.

That's crazy.

Extra sugar actually inhibits the action of the yeast.

When I make bread at home I don't put any sugar in it, doesn't need it. Just flour, fat, salt and water.

My breadmaker recipe calls for 2tsp of sugar per 600g flour. 10% of the flour content is a ridiculous amount of sugar. I hate Subway anyway- it's absolutely grim!

I don't add any sugar when I make bread in my bread maker. Funnily enough, it still rises.

Um...yeast works fine combined with flour, fat, water and salt. I’ve never put sugar in bread, and all my bread comes out fine.

I think the extra sugar helps it toast. Like McDonalds buns, they don't get lovingly grilled or popped in the toaster.
I think the extra sugar means they essentially burn quicker so 30 seconds in the toaster gives the toastiness you'd expect ic it was put on for 2/3 mins.

There is no NEED for sugar in bread. It gets the yeast working faster, so it rises quicker, so it's commercially advantageous because the production time is lower. But you get nicer (IMO) bread by using just yeast, flour, salt and water. No fat needed. Salt is definitely needed from a taste perspective- if you've ever left it out by mistake, you know about it as soon as you eat it!

I use about a teaspoon of sugar in with 450g of flour

and I often use oil when I'm making bloomer loaves as then they are more silky

I wonder how much sugar is in Domino's dough as I find it sickly sweet
