Meal planning/batch cooking

If you’re one of those magical fairy people who meal plan and batch cook, I would like to call on you to share your weekly meal plan if you don’t mind!

2 adult. 3 children. Not overly fussy but won’t eat fish really.

I’m having surgery soon and DH is brilliant but I’d just like to help him out with the organising!

Also, If you have any self-invented family friendly recipes lay them on me!

Have a lovely big freezer and a slow cooker if that helps!

I like to prep ‘one tray meals’ for the freezer - so a bag filled with potatoes tossed in paprika, oil and salt and chicken thighs (freeze them open on a tray if you can, and then bag so it’s not one huge lump) and then I shake out onto a hot baking tray and roast for 45 mins, then add brocolli/green beans/mushrooms/red onion etc etc and roast for another 20 mins. Bit more effort but I get sick of the stew/soup type batch cooking!

You can switch it up with pretty much any protein and veggies tbh.

Other things that I’ve found freeze well are frittatas/quiche/puff pastry tarts and then just serve with salad. Frittata I just warm in the microwave so it’s basically a ready meal once done!

Then soups/stews/chillis are easy peasy.

I make a huge batch of pizza dough and then freeze ready rolled out and separately wrapped in cling film and foil. I just stick the toppings on the frozen dough and cook from there. Works better with a thinner base.

Saturday night home made curry, Sunday roast or stew, Monday curry, Tuesday stew. Weds and Thurs are usually stand alone like sausage and beans.Friday is usually a bit better,last week I made smoked haddock in a chorizo and tomato sauce. Tomorrow it will be fajitas because they're quick and there's rugby on.

I need to make in bulk to double up on dinners. I only ever make enough for one meal!
