Just give them the in-date one.

I assume this is a shop bought ready meal lasagne since it has a best before date on it. I would have thought it is easy enough to pop into a shop and pick up a ready meal so I would find it a bit weird to be offered one, especially an out of date one. Also I understand you are kindly wanting to save the mum the hassle of having to cook something but I would have thought it is likely she also has frozen ready meals in her freezer , or at least fishfingers and chips.

If it was my house, I'd probably bin it. I am perhaps over-cautious with dates, but then I've never given myself food poisoning and don't intend to.

If you served me out of date food without saying and I found out afterwards, I'd be pissed off.

If you told me beforehand it was all you had in, I'd umm and ahh and probably end up saying go ahead. After all, frozen food generally doesn't become hazardous over time, it just might taste kind of crappy.

If it was frozen before the date it’s fine, it’s the whole point of freezing.
