I have a, probably stupid, question about pancakes...

If I add a bit of icing sugar, to make them sweet, will it make my batter go weird?

I've just poured the last of it to make the last pancake or I'd have tried it myself :)

I don’t think it would make the batter too strange, maybe just a little thicker like American pancakes, depending on how much icing sugar you added. Sounds yum either way!

@Eachpeachtree that's what I was thinking - thought dd2 might like a change in her pack up every now & again, sweet pancakes with fruit sounds good in my head :)

In America they sometimes top with butter and icing sugar and fruit instead of syrup it is nice even though sounds a bit dodgy
Are you talking about crepe like pancakes usually with sugar and lemon or American type pancakes?

I would probably top with it not put it in

I use an american pancake recipe which uses sugar and no they never burn.

Sugar is meant to help the baking powder along, so they rise better. (If you are talking about American-style or Scotch pancakes with raising agent?)

I don’t bother, though. They’re fine without.

Depending on what kind of pancake you're aiming this can work really well.

Either a thin, sweet crêpe though you would generally use caster sugar for that.

or, if you like fluffy pancakes, you can whisk the egg whites to a stiff peak, then add as much caster sugar as you like (1-2tbsp or more) and whip up a meringue mixture that you then fold into the batter.
Add 1-2 tsp baking powder too for extra lift.
Makes yummy pikelets or even big round pancakes.

Add fruit (apple slices, berries) to the pan and cover with dollops of fluffy batter for yummy sweet and fruity pancake bites also works well.
Sprinkle with cinnamon sugar or any other topping you like. YUM

Nutella, banana and whipped cream or ice cream also delicioua.

I just wanted to pop back and say thank you- I used the recipe linked above earlier & the resulting pancakes went down a treat :)
