I have marrow, I have mince. I'd like it to be reasonably healthy, and also nice. Impossible? Please share a recipe or link if you can!

I don't understand it, pp have suggested lovely ingredients and then used these lovely ingredients to hide the gross soggy general wetness that is marrow snozzcumber is a brilliant description
Just Throw It Away. The only description that is similar is putting glitter on dog shit.

Oh I lie, marrows are good for something-it's a good test to find out about a new friend. If they say they have a lovely marrow recipe I suggest you reevaluate.

No.

Make jam.

Perhaps much better to grate the marrow (chunks, cheese grater) then drain excess water from it and make friiters, as here:

They'd be good served with a mince-tomato-onion-herb ragout/sauce.

Put rice in bottom of dish. Cut marrow hoops. Place hoops onto rice. Fill hoops with stuffing. Cover rice with stock and add extra liquid as necessary during cooking.

Bake in oven til rice cooked.

There’s a nice Nigel slater recipe where he cuts it in thick rounds, scoops out the centre and wraps them in parchment or foil with cherry tomatoes, feta, fresh oregano and thyme, a chopped chilli and olive oil in the centre that’s rather good. Cooked feta is one of those foods that is so much better than you expect.
Can’t really help with mince though, sorry. I’d guess that Middle Eastern spices might be the way to go.
