your favourite meals to take to work?

I'm fed up of rushing into work in the morning and nipping to the local shop and getting a shitty meal deal sandwich.

I want to start being more organised on a weekend and planning my lunches for the week whilst I'm at work.

I am also trying to lose a bit of weight so ideally something low in calorie too!

I have access to a fridge freezer and microwave at work

What are your favourite meals to take to work for your lunches?

I always make enough for dinner to take a small amount the next day,. So spagetti bolognese and salad; roast chicken and vegtebles etc.

DH became vegetarian a few years back so i just make my usual amount of dinner, then halve what would have been his portion into two and take one the enxt day and freeze one.

Last week for example I had;

  • cold poached salmon with coriander mayo and salad
  • roast chicken and veg
-bacon and asparagus frittata with new potatos

Clean jam jar or mason jar, in the morning, break a couple of eggs into it, some finely chopped spring onions, salt, pepper and a little mature cheddar.

Keep it in the fridge then mix it all up and blitz in the microwave. 45 seconds, stir then another 45 seconds.

I take a piece of nice bread or a roll with butter on and you have scrambled egg and buttery bread.

Also a jar salad, lettuce, dressing and tomatoes on the bottom. Stuff that you like to stay crunchy like croutons or seed on the top so it doesn't get sodden then just give it a good shake immediately before you eat.

When I’m being organised and healthy, I tend to have ‘salad and something’. It’s easy to assemble, you don’t have to think too hard and you can incorporate leftovers.

So a base of leaves and a light dressing

  • add whatever salad veg you like
  • protein type thing of some description (Boiled eggs, frittata, falafel, houmous, chickpeas, Halloumi, mozzarella, tuna, leftover shredded chicken or flakes of fish/prawns, pasta etc etc).

Sometimes I make a batch of roasted veg to add in, or add olives/sun blushed tomatoes/croutons.

If I want something hot (and if you have access to a microwave), make a batch of soup on a Sunday and then take that in with nice bread or crackers?

Like a previous poster, I will often take leftovers to school. We have a microwave so nuking stuff is easy enough. I tend to take stuff that has some sort of sauce so it doesn’t get dried out by reheating; so stews, soups, pasta bake etc.

Homemade soup in a soup flask.
My favourites are carrot and lentil, carrot and coriander, roast tomato and basil and minestrone.

If not soup I like a salad - leaves, tomatoes, cucumber, pickles, avocado, chicken, cheese what ever is lying about.

I too was going to suggest soup. I often use up the chicken carcass from a Sunday roast and make it into- chicken sweet corn soup, chicken noodle or just chicken and veg soup. Pea & ham soup, veg with pearl barley or even just left over roast veg into a soup.

I love carrot, humous and rocket either on a sandwich or in a wrap

Vietnamese summer rolls are great, because you can add meat/prawns or just have veg. The veg ones are gluten free, vegan and very healthy! There are youtube videos on how to roll them, and if you seal in a container or cling film, can be made the day before. I serve with a satay sauce which I make in an old jar. Peanut butter, a splash of soy sauce and sesame oil, sweet chilli sauce then some water and shake the jar. Add more water till you get the consistency you want. Delicious!!!
