@gottastopeatingchocolate is it difficult to make blackberry wine? I fancy doing it but feel a tad daunted!

sleepyhead · 04/08/2020 23:33

Bramble jelly (much better than jam imo)

LegoMaus · 04/08/2020 23:38

Soak them in water to get the maggots out. Make blackberry wine.

After soaking and draining them, use to make bramble whiskey, more interesting than bramble gin.

Gently poach and serve as a hot sauce over vanilla or lemon ice cream, or when cold make a fruit fool with custard and cream.

Poach to use as a sauce for roast duck, with added port.

Make an autumn compote with any combination of poached brambles, apples, plums, black grapes or figs, serve with thick cream or Greek yoghurt.

What bugs??? I have never soaked em in salted water!!

GrumpyHoonMain · 05/08/2020 00:38

@Geppili- spiders, worms, fleas, maggots etc etc. They are a nightmare to get rid of once they get into your fridge.

Mintjulia · 05/08/2020 00:43

We bottle them in syrup and eat them through the year with pancakes or icecream.

MuseumOfYou · 05/08/2020 00:48

Make a compote.Cook the blackberries with a tiny amount of water & some sugar

Add a teaspoon of vanilla bean paste, a marriage made in heaven...

JingsMahBucket · 05/08/2020 00:53

@Horsemad that recipe sounds good. Is this the original? www.greatbritishchefs.com/recipes/blackberry-upside-down-cake-recipe

Blackberry sorbet is lovely too

TheHookOfYourSplendour · 05/08/2020 00:59

Blackberry cordial is amazing! It's like Ribena but less tart. I'm planning to make a huge batch this year as last time I made it it went in a flash!

winetime89 · 05/08/2020 01:02

We made a blackberry and apple crumble with the ones we picked today. Was delicious

whattododo · 05/08/2020 01:03

Gosh I'm jealous you got them home... my dc just eat them as we all pick...it drives me nuts 🤣🤣

roxfox · 05/08/2020 02:28

Hahaha I did not know about all this soaking and salting before eating blackberries. Guess I've been eating a shit ton of bugs Shock

CherryMaple · 05/08/2020 07:05

You need to soak in salted water for a few hours or overnight then rinse in a sieve and check the berries. There will be maggots/larvae. Don’t let this put you off Grin

I make blackberry bread and butter pudding. Yum. Looking forward to trying some of the other recipes on this thread!

bimblingonagain · 05/08/2020 07:41

I wash them then freeze. Freeze flat then put in sandwich bags once frozen so you dont get lumps. Then I have them with porridge most mornings, yum.

Horsemad · 05/08/2020 07:45

Not sure @JingsMahBucket, saw it in a newsletter I received. 🙂

soruff · 05/08/2020 08:57

As others say, freeze separately. The very best fruit look good as decoration for other desserts in the winter.

LoisLanyard · 05/08/2020 09:04

I need to go and pick some more - all these suggestions sound great!

LoisLanyard · 05/08/2020 09:05

But I have to say i've never soaked them in salted water - washed them, yes, but never soaked. Haven't yet died from eating them (in my 40+ years!).

Tanaqui · 05/08/2020 09:11

Mine never have maggots in! The odd spider on the outside. They freeze brilliantly and then you can have crumble at Christmas!

rosegoldwatcher · 05/08/2020 09:12

In a leafy salad with toasted hazelnuts - lovely!

WildWaterSwimmer · 05/08/2020 09:19

Another vote for Apple and Blackberry Crumble, a must with the harvest at this time of year!

Squashbuckle · 05/08/2020 09:59

Blackberry and white chocolate cheesecake is amazing! It's a really pretty purple colour and is even better with a ginger nut biscuit base.
