Someone needs to tell me what's so wrong with draining water from rice!

I just saw and feel personally attacked Grin. But seriously, what's wrong with how she's cooked the rice? I've heard vaguely before that you're supposed to cook rice in a certain amount of water but a completely clueless about the rules and why. So if you know, please educate me. I am clearly offending millions of people if only they knew my dirty secret...

I grew up in a land where rice was king. I remember vividly the horror when I came to uni here and saw my housemate casually draining rice Shock I had never seen such a thing!!

Double water to rice (maybe a little more for basmati), bring to boil with lid ajar, turn heat down once boiling and leave to bubble. Wait til level of water touches rice. Turn heat off, put lid on, leave for 20 min - done.

As long as you rinse rice first, it won't matter what cooking method you use. You should soak/ rinse the rice until the water its in is clear not white and starchy. Then any method will make nice fluffy rice without the high arsenic.

Thats not strictly true. Some arsenic is removed by rinsing. During cooking more is released into the cooking water. If you use the absorption method the arsenic is reabsorbed into the rice. If you drain the water away the arsenic drains away with it

I never knew there was such debate about cooking rice!

I rinse the rice, bung it in the pan and pour a load of boiling water on it from the kettle (not measured)

Quick stir and leave to cook, once done I drain it then rest the seive (covered by the lid) in the pan whilst I faff around serving everything else, by then the rice is lovely and fluffy.

but notice this also talks about type of rice & methods of preparation
so washing reduces arsenic & type of rice Basmati & another one they mentioned (!) has less
but we are talking traces
I am more worried about gluten free stuff (IBS had pasta last night & my bread...) Oh what the hell I am over the hill anyway!

I buy the frozen packets and nuke them.

Perfect every time and only takes a few minutes.
