Lasagne Ordering Q

I don’t often make lasagne so checked a recipe to get the ragu/pasta/white sauce order right. Recipe seemed odd so checked 3 more which all varied slightly.

I feel the white sauce should always be encased between 2 pasta layers? Apart from on top, obv. None of the recipes suggested this?!

Is it ragu/ws/pasta/repeat

Or ragu/pasta/ws/repeat

Or does anyone do ragu/pasta/ws/pasta/repeat as I want to?

(I went with option A and it was fine btw)

As above, mince, pasta, white sauce. I only do 2 sets of layers so cheese on white sauce at the top.

Ragu, pasta, white sauce, repeat here as well.
Then last layer is lots of white sauce and grated cheese so you have something to dip chips or garlic bread in

I did do both grated cheese and mozzarella (hair toss) on top- not a total rookie. It was a lovely stodgy cheesy Friday treat so I’m hoping to get it right next time!

I would like to know if the 'more pasta' method works though. I always find putting the ragu on the white sauce a bit tricky.

I only put the white sauce sprinkled with cheese on top. The other layers are all ragout/pasta. I've been doing it that way for about 40 years so probably had an old recipe originally.

@CaptainMyCaptain bet your recipe is pretty tasty after 40yrs of practice though!

I normally find white sauce super stressful but the kids were playing quietly so I gave it a go- it was meant to be Bologna’s but I thought ‘dare to dream, Pog!’

I do ragu pasta sauce repeat but have tried the ragu pasta sauce pasta ragu - it's fine but needs longer for all the middle pasta to cook, if I'm feeling really filthy I do : ragu pasta sauce cheap cheese slices with no gaps repeat Shock

@anothernamereally Now you mention it I remember a historic lasagne disaster where I did the pasta/ws/pasta thing and the middle layers took so long to cook the top started to go black and even then they were still chewy... I think that’s why I thought I’d better check the recipe this time as I remember making a horrid one once.

We had it with salad. Surely bread is too filling?

Bechamel sauce, pasta, ragu, pasta, ragu until final layer of pasta; then top with Bechamel and cheese on top.

Stays firm, but the pasta ends up cooked through. When I used to do WS/ragu/pasta etc it always fell apart when trying to serve and half the time the pasta wasn't properly cooked.

I have actually never made a lasagne but use the Delia Smith recipe which is similar but you mix the ragu, sauce (I use cheese sauce not white) and cooked penne pasta altogether and put in a lasagne dish. It has always gone down well. I finish with cheese on top cheddar and mozzarella mix. I also find using some tinned cherry tomatoes in the ragu can add a nice touch.
