What to do with a side of salmon?

There will be 6 of us for a BBQ on Saturday. Got the usual sausage and burger fare, but got overexcited in Lidl and bought a whole side of salmon.

Now what the hell do I do with it?

Oh, I should probably add that DP, the BBQ king, doesn't want to BBQ it because he's got to do sausages and doesn't want to buy more coal 🙄😂 so oven-y poach-y thing please!

I would cut it into fillets rather than cook the whole thing.

Wrap it in foil with lots of herbs, seasoning, olive oil/butter, lemon juice and BBQ.

Leave the salmon whole and place on foil large enough to wrap it in.
Top with chopped ginger, coriander, garlic, chilli , soy sauce/ teriyaki sauce , lime slices and spring onions.
Bbq whole in tin foil packet .
Drizzle with a little sesame oil when cooked if you have it.

Alternatively top with loads of slices of lemon, butter , salt and pepper and cook in foil .can chuck on some buttered asparagus to go with it!

Create a salmon sandwich with half on top and leeks and salt and pepper and a knob of butter in the middle. Maybe a bit of lemon juice. Double wrap in foil, bake in a low oven. It’s lovely with potato salad or new potatoes.

Just seen your update, my favourite way to do salmon fillets is griddle skin side up for a few minutes then bake skin side down for 8-10 mins.

My ideas can obviously be done in the oven too .
I'd chuck in some baby potatoes to roast in lemon , olive oil and garlic too if the ovens on .

Sandwich is to keep the juices in - you put it salmon side to salmon side with the skin on the outside.

So DH wants to cook the stinky salmon inside the house, but burgers and sausages outside??? Confused. I'd even par-boil/par-cook the sausages beforehand so they only need some scorching on the grill if coal is limited, then BBQ the salmon on there too!

  • Turn into graxalax or beetroot gravalax
  • Cut into smaller pieces, marinade an Asian honey/soy type then fry or grill on the night
  • Leave whole, wrap in foil with lemon/fresh herbs and bake

Just roast in oven with lemon and herbs, and use any left overs to make a lovely pasta dish. Tbh if you think everyone is just going to eat burgers (it doesn't really go with meat), then I'd just keep it for another meal. Jamie has great recipes for left over cooked salmon.

Salmon smells delicious when being cooked. Just bake it with lemon, tomato slices and dry vermouth to keep it moist and serve it cold.
