Just that.

And lobster.

Genuine question - why would anyone want to replicate the taste , smell and texture of a product made from blood for vegetarians?

I eat meat and blood pudding is a step too far for me

Littlebyerockerboo · 01/07/2020 18:21

op, ive been wondering this too.
I used to be veggie, did vegan January and i want to return to a more veggie diet.
I LOVE black pudding and was only wondering today what would be a good alternative

To PP who asked why, because you are veggie/vegan doesn't mean you don't miss the taste of things that are not. Hence the substitute foods... especially if you were brought up/used to a very animal product based diet.

I also like to make easy swaps ie. No dairy milk, rather than use the animal derived counterparts.

There are vegetarian black puddings out there. I haven't tried them though so I can't say how close they are to the real thing.

dialmformmmm · 01/07/2020 18:38

I just wondered if there was a way for me to understand the taste.

I’m a vegetarian but remember black pudding. It’s actually delicious! I think a kind of nutty flavour not really strong.

Persephonecall · 01/07/2020 18:43

I got a veggie black pudding from Waitrose a few months ago. It was really good actually. Can't recall the name though.

LuvMyBoyz · 01/07/2020 18:45

Fruit pudding is a thing in Scotland. Not equivalent but absolutely delicious on a fry up.

tabulahrasa · 01/07/2020 18:46

There’s a Simon howie black pudding that according to my DP says tastes like real black pudding... I don’t know cause I didn’t fancy it and I don’t know what black pudding tastes like anyway

Maybe a veggie haggis. Black pudding is lovely I find it odd that people eat red meat and are squeamish about it.
A sub for lobster - king oyster mushroom.

stickygotstuck · 01/07/2020 19:03

Stuffing.

ComeBy · 01/07/2020 19:04

In a breakfast I would substitute halloumi, for a salty, intense flavour.

MitziK · 01/07/2020 19:19

Black Pudding - large, flat mushrooms chopped and cooked for a very long time until they are jet black, then combined with oats, lots of pepper, spices and some fat and maybe some finely chopped pinenuts would be the nearest thing.

Trying a veg*n haggis isn't quite the same, as a haggis tastes different and has a looser texture, but it would be the nearest, perhaps with added mushrooms?

It's an intensely deep, rich and savoury flavour with a crispy outside and softer texture inside.

Lobster, I have no idea. There is nothing that can replicate prawns, which are sweet and light and savoury and moist and dense all at once, so I'd imagine it's equally impossible to copy Lobster.

Mock crab is a reasonable imitation of the real thing, though. Sieved boiled eggs, grated cheese, salad cream/mayonnaise, vinegar and a load of pepper. Perhaps try that but add a little ketchup to the sauce to get something more like shellfish? It's pretty much what crisp manufacturers have for things like Skips.

AdaColeman · 01/07/2020 19:26

For something similar to lobster, I’d say try small to medium whole chestnut mushrooms. You could serve them with one of the classic sauces for lobster, such as Thermidor (cheese & cream), l’Américaine (tomato) or Newburg (cream & cayenne pepper).
Lobster is quite a substantial chewy meat, so you would get that texture from the chestnut mushrooms (or puffball mushrooms though they are not as easy to source) and you would have the flavour of the sauce.

No answer about black pudding, but vegetarian haggis is said to be very good, and close to the meat dish.

PersephonePitstop · 01/07/2020 19:28

You could do what a ‘vegan‘ family member of my DH did.

Spend all week telling me about your vegan diet, get me to run to the shops for various items, annoy the fuck out of people during the cooking of every meal which quite rightly included stringent attentive avoidance of cross contamination then on the last day of your visit have some (real) black pudding for your breakfast! Hmm

Fozzleyplum · 01/07/2020 19:41

It's not really black pudding, but MacSween's vegetarian haggis is really good.

AdaColeman · 01/07/2020 20:35

@PersephonePitstop I’ve laughed and laughed at your post, I know a “vegan” just like that!

icedaisy · 01/07/2020 20:42

Scotland here.

As well as fruit pudding mentioned a lot of people have white pudding. Which is like black pudding but without the blood. So oatmeal, fat, barley.

Just looked and there is a vegetarian version of this, I have not tried it.

eveningfalls · 01/07/2020 23:51

@stickygotstuck stuffing

I think this sums it up. It is salty and thick and rich and a lot of vegetarian recipes to make an alternative include black beans. If that helps. The texture can be crisp or firm. But I'd never eat a plate of it without something else. There is a whole load of oatmeal and other bulkers in it, so maybe black beans do the flavour job, not sure about recreating the fat content though?

psychomath · 02/07/2020 01:00

Vegetarian black pudding tastes like the real thing to me, though I've only tried the real kind once so might not be the best judge. Only had it in cafes though so not sure where you'd buy it.
