Chicken pie

How do you make a decent chicken pie. Mine always end up dry especially when I reheat the 2nd half the next day.

Also if I was making a pie for someone else would I cook it all first and they just reheat?

I poach cubed chicken chunks in stock. You can add onions and/or mushrooms or leeks. Add a bit of cream when it's nearly done.

Transfer to a deep baking dish. For the pastry I use frozen - defrost and roll out, cover and seal edges. Wash with egg.

You have to poach the chicken in stock, and then make a white sauce using the stock and milk. Nice to add a couple of tablespoons of wine too for the acidity and taste.

Thanks. I do use stock but do cook the chicken in oil before adding stock. Maybe I just need to miss out that bit. Good idea about foil for reheating. Thanks.

I use ready made puff pastry though and just roast 6 chicken thighs if I don’t have leftovers. So quick and easy!

Found the recipe I always use now. It's a chicken, ham and leek in a creamy sauce. I actually use less cream than it says and it's still delicious. I also tend to use a bit more chicken and bought puff pastry. Aside from aforementioned foil, I reheat at a low temp, about 130, for a good 45 mins.

Having done Jamie Olivers in less than 30 minutes I’d never use another recipe.

It’s really easy but full of flavour.

I usually either do a leftover roast meal pie with whatever’s left from a roast meal Chicken, veg, potatoes, in a thick gravy or a chicken and mushroom pie in a thick mustardy mushroom sauce.
Sometimes I’ll do a chicken, ham and leek, particularly if I’ve leftover ham from a joint. More often ill do that as a raised pie though.
I do fry mushrooms and chicken first and if I do a roast pie it’s alrea been cooked. I don’t usually poach chicken first.
