I'm literally boring myself to death with my own cooking and need some new ideas. I love cooking and not afraid to try new things but time restraints mean that I like things that don't take too long - 40 mins max unless it's just something you bung in the oven. So my usual staples are:

Spaghetti bolognese and various combinations using bolognese sauce.
Fish with lentils and tomatoes and crusty bread.
Sausage, mash and beans
Parmesan chicken, jacket spuds and veg
Chickpea curry, rice and flatbreads
Omelettes/Frittatas
Chinese style pork and rice
Chicken tikka and bombay potatoes
Macaroni cheese
Lentil Shepherds pie

I also have a very fussy 16 year old who snacks constantly but I need ideas for reasonably healthy snacks that he can take out with him. He doesn't like anything it seems. Grin

My weeks menu is:

Mon - jacket potato and salad (using up some chili from the weekend)
Tue - youvetsi (Greek lamb and orzo stew thing)
Wed - chicken siam (Thai chicken and cashews)
Thu - garlic pork chops and potato salad
Fri - chicken curry

A very meaty menu but Mr Noodle needs protein (and I just like meat)

Try simply cook for easy midweek meals.

They’re spice packets and only require 3-4 fresh ingredients, I love them and use probably two a week.

Also quick mid week meals that go down well in my house which need relatively few ingredients :-

I got so fed up with lockdown, ingredients/grocery deliveries hard to get.

I’m not sure our staples are any more exciting than yours but here are some of the things we do:

  • Salmon baked in foil parcels with chilli, ginger, soy, lime, some finely sliced spring onion and coriander, sometimes add honey. Served with stir fry veg and noodles.
  • Paneer tikka type thing - chop paneer into cubes and marinate in curry paste (I like the pataks paste pots, you can usually get them for a pound in Lidl) with whatever veg you like e.g. mushrooms, red onion, pepper, cherry tomatoes. Cook in a hot griddle pan, I serve with rice or naan bread and make a yoghurt dressing either mint yoghurt or just stir a bit of the curry paste through it.

Toad in the hole or sausage casserole- we use cauldron veggie sausages but you could obviously use ‘proper’ ones. There’s a gorgeous meat free sausage casserole recipe from Tesco but would work just as well if you did it with meaty ones.

Risotto - using whatever veg we have, you can of course add chicken or fish etc. Prawn pea and lemon has gone down really well when I’ve made it for others (I’m a weirdo who picks the prawns out!)

‘Pink pasta’ - finely chop onion and sweat for a really long time. John Torrode who I got this from says you don’t need garlic but I like to add it anyway. Chop a load of fresh tomatoes - good for using up older ones - and add those in, continue to cook down. Add whatever flavourings you like - chopped anchovies, capers, olives, fresh herbs, chilli etc. Cook your spaghetti and then add it to the sauce and stir through. Lots of grated cheese on top!

Homemade pizzas - you need to prep the dough a bit in advance but not time consuming apart from that. These tend to be DH’s responsibility in this house as he does them better than me!

Roast a load of veg -(peppers, aubergine, courgette, butternut squash, sweet potato - whatever floats your boat) in olive oil with garlic and some herbs and drizzled with balsamic vinegar. Add cherry tomatoes for last few minutes of roasting time. Stir through cooked pasta and crumble in a block of feta. This is so simple but one of my all time favourites.

Creamy smoked salmon pasta.

Fish curry - I tend to just make it up/ use a paste pot and some coconut milk, but there’s a cod and spinach yellow curry recipe on bbc food that’s nice.

Veggie/ black bean fajitas or enchiladas.

Would DS eat falafel? They make a good snack.

Stuffed mushrooms/stuffed peppers
Baked potato/sweet potato with various toppings
Tuna pasta bake
Homemade egg-fried rice
Homemade soup with bread
Cottage pie/shepherds pie depending on what's in the fridge
Homemade burgers with wedges

Mango chicken

So easy

Chicken pieces, onion, garlic, broccoli florets or any green veg, red pepper, double cream, mango chutney, seasoning, chicken stock cube and cornflour.

Brown chicken.

Chop everything else into large bite sized bits, fry in same pan for 6 mins with chicken.

Crumble stock cube into a small amount of boiling water. Add mango chutney (whole small jar) stir into pan. Add corn flour in a small amount of cold water. Stir well.

Cook for 10 mins alongside the basmati rice (both take 10 mins)

When it's done, season to taste, add small carton of double cream and taste. Add more water if needed.

Drain rice and serve.

Really seriously tasty.

Just made quesadillas.
Mash two tins mixed beans roughly. Add chopped spring onion, plenty of grated cheese, tablespoon or so of chipotle paste, same of tomato purée and mix together, season and add a pinch of sugar. Spread a bit onto a tortilla, leaving a big gap and fold into a semicircle shape. Fry for two minutes on each side, serve with salad with tomatoes and avocado. It made 8 tortillas. Takes 20 minutes tops.

Another one I love is chopping some chorizo and baking on a low heat for ten minutes or so until lots of lovely oil has oozed out, then putting in a pack of raw king prawns and back in the oven until just cooked through, maybe 7 minutes ish. Tip the whole lot onto some rocket, making sure to get all the lovely oily juices in. Have with some olive bread. Can also cook some peas and put them in the rocket too.

Last one.... smoked mackerel, heated according to packet, baby spinach wilted in the pan with hot butter and a poached egg. With new potatoes if you need carbs

I don't think anyone has said paella - recipe on the back of the paella rice box! We usually do chicken and chorizo, but king prawns as well for a treat.

Also, we have 'sausage thing' which is basically a tray bake - oven at about 190c, cubed potatoes in first for 5-10 mins, add onion wedges for another 5, then add pepper strips and lay sausages over the top and cook for 30 mins more (give it a stir round half way).

Last last one.... pasta alla Bruno from Nigella. Fry diced streaky bacon (2-3 rasher per person) until crisp. Grate in a clove of garlic and fry for a minute more. Off heat, put in a small punnet of halved cherry toms, and I like to add some osem chicken powder and a pinch of sugar. Lid on and cook for 15 minutes then stir through pasta, add mozzarella if wanted.

We’ve just had this Sausage pasta for the first time. It was lovely but when we make it again we will only use 50g cream cheese as it was just too filling (and we’d put less in anyway, 150g rather than 250!) It actually tasted great without any cheese at all - so 2 suggestions for the price of one!

Creamy paprika chicken is a favourite in our house. I season chicken breasts with salt, pepper, garlic powder and paprika then bake in the oven. Sauce is just chopped onions and peppers and garlic fried til softened, then add a little water and a ham stock cube. Add paprika and a little oregano plus salt and pepper, then once bubbling add a tub of double cream. Pour over the chicken and I usually serve with rice and broccoli.

Also a great recipe I tried last night, which was a huge hit even with super fussy DS13. Pork tenderloin with a honey and garlic sauce. Made a rub of paprika, garlic powder, salt and pepper and coat the pork then roast at 175c for 16 mins. Meanwhile make the sauce of honey, light soy sauce, cider vinegar and pureed garlic. Whilst the pork is resting pour the juices into the sauce and boil until it's reduced and a bit syrupy. Cut the pork into thick slices and serve with the sauce.
