What is your best, go-to cake recipe?

I’m sure we all have a favourite. Mine would be Victoria Sponge from an Usborne Children’s book of baking. It works every single time and is pretty easy.
What’s yours? And share the recipe if you’re happy to!

Mary Berry Victoria Sponge from BBC good food, and 'chocolate birthday cake' also from BBC good food. Both also work if you bake them as cupcakes.

If anyone has a good buttercream recipe I'd love to read it Smile Mine never comes out very nice.

Nigella’s birthday cake, I can put it in shaped moulds or just make a normal cake it always cones out perfect and so yummy.

I’d not see any vanilla since before lockdown until yesterday when Aldi finally had some in.

Buttercream? If you have a food mixer put a whole, softened block of salted butter in and whip until light. Then add a whole box (I think it's 500g) of icing sugar and let the mixer do its thing until it's white and fluffy (scrape it down a couple of times)

In terms of ease it's a basic sponge.

Break 2 eggs and weigh them then add equal quantities of flour, caster sugar and butter.

So if eggs weigh 100g, you need 100g of sugar, 100g butter.....

If you want a thicker cake or enough mix for 2 pans just do the same but with more eggs.

In terms of deliciousness it's a draw between carrot cake or banana, walnut and chocolate chip bread.

Nigella's chocolate olive oil cake, it's delicious. Just Google the recipe and follow to the letter, I always use all ground almonds.
