How shall I cook this filet mignon?

I've got a 600g piece of filet mignon but all recipes seem to be based on a smaller amount- should I cut it up before cooking? I like my steak medium rare. Thanks!

That will feed four people, are you planning on roasting it?
If so, brown it all over in a frying pan with a little oil, wrap in foil and roast for about 30 minutes.
You might get more helpful recipes for that weight if you look up fillet of beef rather than filet mignon. Try James Martin on BBC Food, you'll find that a lot of the recipes are for Beef Wellington so ignore those.
Don't chop it up (unless you want to make beef stroganoff!)

Take meat out of fridge for an hour before cooking so it reaches an even temperature all the way through.
Heat oven to around 180 fan
Heat some oil& butter in a frying pan & brown meat on all sides
Season with salt & pepper.
Transfer to roast tray or baking sheet and place in the oven I don’t cover but that’s my choice.
Roast for 30 -35 mins. Remove and let it rest, covered in foil for about 15.

Add aany roasting or standing juices back to the browning pan and add a glass of red wine, reduce by simmering . If it’s not tasty enough add some beef stock.or turn it into paper sauce.

Ah bless you both, that's great. The recipes I'd seen said roast for 7 mins (smaller quantity) so I'm glad I asked here - especially as dh doesn't like steak at all bloody!

A meat thermometer would help you to get to that "just done" point that your DH likes, maybe a treat in the future?
Maybe go for 35 minutes if he's not keen on very rare.

I'd slice it up, fry it up and serve in fresh bread rolls with some lovely fried onions.

That's what I always do.

Ada I keep meaning to buy a meat thermometer or drop some heavy hints before Christmas! There have been many times when one would come in handy.
