Help! In shop. Realised I need anniversary meal for today.

Or if you must lasagne with a nice salad and posh garlic bread. For goodness sake buy a fresh cheese sauce and layer with that. Don't try and make one.

Nice quality pizzas (if the shop has frozen Crosta and Mollica ones, these are amazing) and ice cream?

Are you OK? You seem to be disproportionately worrying about a simple everyday task.

Roast side of beef with homemade potatoes, Yorkshire’s and horseradish!
Or a salmon Wellington with veg
Or fajitas/nachos and lots of dips etc

Boil pasta for 6 minutes, add chopped ham, some double cream & grated cheese. Bake in oven for 30 minutes & serve with garlic bread. It’s so easy. Desert - baked bananas sprinkled with brown sugar & cinnamon & served with ice cream. Dead easy.

You don’t NEED to make a meal from scratch, especially if you’re not a confident cook. So do you WANT to, in which case I recommend a traybake, choose whatever protein, veg and extras you like, bung it in the oven drizzled with olive oil and it will be delicious. Or you somehow feel coerced into cooking from scratch, presumably by DH, in which case the anniversary is not worth celebrating imho.

Just do a meal that everyone enjoys. Spaghetti bolognese maybe and buy a nice dessert, a bottle of something, some garlic bread and salad.

If it's your anniversary that presumably means it's a special day for you as well as for your husband, so shouldn't you get to pick something you'll enjoy without slaving away at an activity you don't much enjoy, like cooking? Go for a ready meal or something that requires minimum effort, or order a takeaway! Happy anniversary. Flowers

Pork in mushroom sauce. Pan fry mushrooms in butter, remove Pan fry chops or pork steaks in same pan (or thinly sliced pork tenderloin). Remove, return mushrooms, add tub of double cream, dijon mustard and season. Add meat back to the pan. Serve with cubed roast potatoes and tender stem broccoli.

Lasagne is good. Layer your usual bolognaise with pasta and a bought cheese sauce. Serve with salad and crusty bread and a nice wine.

Pasta: fry off some chopped bacon. Add tinned tomatoes and stick cubes. Add Creme fraiche and frozen peas, toss the cooked pasta through, salad and bread.

Rotisserie chicken with potatoes and veg.

But the others are right, why so much pressure on you to cook?

Usually for us something ‘special’ is something we don’t eat as often - so either takeaway or totally unhealthy (I do a brilliant fried chicken)
Or something like lamb or steak which we eat less often.
What about lamb chops buttery new potatoes and salad? Would kids eat lamb. Mine wouldn’t but they’re small. Could do lamb cubes with garlic and oregano fried up and served with flatbreads salad and fries like a nice kebab. Tatziki on the side.
Could do steak fajitas tray bake style - sliced up thin with peppers and onions and kids can serve themselves. Buy some guacamole sour cream cheese. Ace.
It’s our anniversary this week and I’m either doing lamb (can you sense a theme here?) or beef probs truffle mashed potatoes if I do that. It’s all about the sides starters and dessert!
Anything is special with a great bottle of wine.
