Uff, today's Yorkshires are flat as pancakes

I cant make them to save my life. And I'm from Yorkshire. Always flat as a pancake.

I make them in a jug now, 3 eggs, see what measurement I get to and add the same amount of flour and milk, the first thing I put in the oven is the Yorkshire puds pan with the oil in, and I make the batter first and leave it in the fridge till the end so it’s good and hot. Mine have just gone in the oven

I use same recipe and method each time but every ten or so times they'll inexplicably turn out like pancakes for no good reason

I make two different lots. For OH and child I used 70g plain flour, 100ml milk and two eggs. For me I used 40g arrowroot, 120ml cream and two eggs. I use a silicone bun tray with olive oil. Theirs came out huge, mine were enormous!

Really hot oil and a hot oven is the only secret, beyond that most variations on a batter made with plain flour, eggs and milk will turn out fine.

@simonisnotme haha I discovered the same today- I had no plain flour left so tried with SR instead.
I made some amazing ones earlier in the week so was a bit frustrating that tonight's were a disaster!

Tbf dh thought they were nicer in cake form!
Me and the kids definitely disagreed...

Make your batter 24 hours in advance. The further in advance you make it, the more the gluten can develop and the bigger they will be. Ours are consistently huge since we started doing this.

I put an extra egg in, it makes all the difference.
