Meals requiring no fridge and freezer?

Fridge freezer blew up a week ago. Turns out it’s a recall model so guy came out and changed a wire and put on a door. It’s still not working right and customer service shut over weekend. We may as well go through process of trying to fix/ see if they would replace, but by time they come out again, and if we need to buy a new one, could be best part of 2 weeks without it. The freezer is a little cooler at top so cheese and butter are surviving ok in there so far but not much room.

Any lunch/ dinner meal ideas? We are veggie as well and two preschoolers involved.

Tinned/dried stuff is probably going to be your friend. Pasta and sauce, beans on toast, eggs, fresh veg.

Do you have slow cooker?

Mixed bean casserole: 3-4 tins of various beans, 2 tins tomatoes, stock cube, onion, garlic, cumin and paprika (if you have these). Serve with potato wedges

Oh thank you all, that’s really kind to give all the links as well @Ricekrispie22! And lots of good ideas there thanks. This week the kids have loved eating all the slowly defrosting freezer crap and we ate all the bits they wouldn’t, like chili etc. They won’t eat stuff like that, even when not spicy, although they love baked beans. The tagine may bE worth a go tho, and we have loads of couscous. And defo sweetcorn fritters. I think I have a nacho kit in cupboard too.

@AtleastitsnotMonday, technically could shop every day or two but can’t be arsed, hoping to minimise that. Prior to this had been doing a fortnightly big shop with an in between top up.

Tonight was eggs and beans on toast, which the kids love, it’s only me who will really bemoan the lack of variety I think...

Kosheri goes down well with my DC - you can use tinned tomatoes instead of fresh in the sauce, and add less chilli to taste. The spinach in the following version adds to the nutritional value but isn’t canonical.

Not massively healthy, but:

Salsa chicken tacos- Get the jarred salsa, a can of chicken breast and mix them in together and cook. Add to soft taco shells. Top with cheese, jalapenos etc.

Chicken creamy pasta- buy a jar of creamy pasta sauce, mix with canned chicken and add to cooked past et voila! You could add canned veg for health. Also works well on jacket potato. Also works with tinned ham or tuna.

We buy tinned chickpea daal and have with naan bread or homemade flatbreads. Might work for you.

Ahh @MouseholeCat, I really appreciate the effort but as I said we are veggie and the thought of canned chicken is actually giving me the boak...

Gnocchi (from the dried pasta section rather than fresh) and pesto is na firm favourite here. Bonus it also only takes ten minutes to cook!

Dried mushroom risotto. Soak your dried mushrooms for a few hours in water. Bring to the boil. Meanwhile dice an onion and sauté in butter. Add risotto rice. Start spooning over the mushrooms and the soaking water (which will now be brown in colour) and stir regularly until the rice is cooked and creamy and risotto like and all the liquid is gone. Add salt to taste and serve. Parmesan (or veggie equivalent) is lovely over the top but not essential.

Coconut dal, we have it for lunch at least once a week. A bit of yoghurt at the end but I've done it without when I've run out.

When you shop:

Fridge isles for what you will eat today

Room tempreture isles for what you will eat anytime now or later except if the portion is too big and leftovers require refrigeration.

Do you have a neighbour who could supply you with ice blocks to help keep milk and cheese cold?

You could freeze water bottles and tupperware boxes and out them I. Your freezer and you will probably keep it cold enough for some basics. It will just act like a cool box.

Keep adding new freeze blocks in ( probably twice a day if you don't keep going in and out).

Vacuum pack gnocchi is a great shout, thanks. And genius about camping meals! Just the kind of signposting I was hoping for.

Coconut Dahl looks amazing, as an aside I’m amazed tho by the saturated fat content mentioned - is that how fattening coconut milk/oil is? I always assumed it was quite healthy!

Sensible suggestion, @BlackKittyKat, but our neighbours have actually done us so many favours over last wee while (shopped for us when isolating etc, lent us garden tools that we broke by accident Blush), we didn’t want to ask more. The top drawer of the freezer is almost as cold as a fridge for now, although it keeps cutting out and needing reset. So am keeping a few bits in there.

Yes, @BlackeyedSusan, hotpoint quandrio? It was here when we bought so is probably around 10yrs old, I think we’ll end up replacing but kinda need to go through the motions of trying to fix, annoyingly.
