Why do my cookies always come out like flat sponge cakes?

They need to go in the fridge for an hour before cooking

Definitely fridge before baking as above. Spreading can also happen if there's too much butter in the recipe.

What recipe have you been using? Are you getting a cakey texture?

I've tried a few different recipes. All turn out like flat sponges. None of the recipes say to put in the fridge first.. I'll give it a go though!

Do your recipes call for baking powder or baking soda? I have sometimes found that baking powder can make them a bit cakey.

Do you put the dough in the fridge or the cookies on the baking tray?

All purpose flour is just plain flour.

The dough just goes directly in the fridge with a cover. If you want to freeze some of the dough, you portion it out, then freeze on a flat surface so they don't stick together. Once they are fully frozen you can stick them in a bag

For biscuits it's normally plain flour and bicarbonate of soda. If you are using self raising and/or baking powder they will rise like cakes.

My sponge cakes have emerged from the oven looking like cookies. Didn’t know the opposite could occur. In the meantime Mary Berry’s recipe has changed my life where cakes are concerned.
