Meal prep and batch cook help

hello, I'm thinking of buying some of those little square glass cooking dishes that are freezeable and can go in the oven and you can put a clipped plastic lid on the top.
What I would like is some ideas of meals I can prep in there on a Sunday to then cook throughout the week. And if they won't last, then maybe ones I can prepare to put in the freezer and cook when needed. Any ideas?
It is only me and I'm not back to working after only working part time throughout the lockdown period so I need some simple ideas to help me eating a bit healthier without having to cook every night!

OP I will leave others to suggest recipes. I just wanted to say I bought some of those Pyrex dishes with the lids you are talking about and actually I wouldn’t bother. You need quite lot of them, and the cost will rack up. I always found them quite awkward to fit in the freezer, for some reason.

Personally I’d personally buy say 20 or so of the plastic tubs that takeaways often come in, and portion your meals into them. You just take them out of the freezer as needed and then decant into a suitable dish for the oven. That is what I’ve always found easier anyway.

Cottage pie or shepherd's pie
Bolognese
Chilli
Any kind of curry
Any kind of stew or casserole

will include links to the recipes below. they all go into the freezer and you can take them out and cook when needed x

meatballs, you can have them with pasta or rice

veggie enchiladas- freeze them once they have cooled after baking. when you are ready to eat, defrost in the fridge and then pop them into the oven at the baking temperature until warmed through

bolognese

chicken soup, have with some crusty bread

pasta salad, defrost in the fridge

It may sound so silly but I've been a bit lazy with cooking recently and I need some healthier meals back in my life. I love cooking but it is finding the time in the evenings. Can't wait to look at all of these recipes later!

It's not to everyone's taste but something I regularly make for the freezer is Thai curry using ready made paste, with lots of veg (usually peppers, broccoli, courgette, maybe sugar snap peas, baby corn, spinach - whatever I have really!) and then some white fish cut into cubes OR tofu that I've already cubed and fried until golden.

I also make batches of pesto and freeze in ice cube trays then decant into freezer bags - then you always have pesto to stir through pasta. I do the same with chimichurri and use it on top of fish fillets or chops for a whack of flavour to add to a quick dinner.

Check out The Batch Lady - she's fab. She used freezer bags but I agree with a PP who suggested the plastic tubs that takeaways come in.

I buy boxes from Lakeland plastics. They come in different sizes but all the lids fit them all and they stack well for storage. I freeze in them, defrost either for a few hours or in warm water then tip into a glass 2l pyrex jug to microwave

I use (and reuse) plastic takeaway tubs. They stack nicely in the freezer. I make

Katsu curry (freeze the sauce and add veg or tofu when I defrost)
Various curries - chickpea, spinach and potato, aubergine and lentil
Soups
Veggie chilli
Tagines
Thai curry pastes - then you just have to add veg and coconut milk
Chickpea burgers

I tried freezing mash and it went so weird and grainy and gross. Other people seem to have success with that though?!

I don't use tubs, because I feel there is alway space left between them. I use plain zip lock freezer bags and freeze it flat they stack perfectly!
