Fridge cake/dessert made from biscuits and cream?

Does anyone remember this? It was a simple recipe of chocolate biscuits and cream, possibly some other ingredients, and that was it.

It went into the fridge and delicious magic happened, and it turned into dessert.

I know I didn't dream it. Fairly certain my mum made it with Baileys, but I remember the non-alcoholic version.

Before anyone suggests it, I'm not going to experiment because I don't want to waste ingredients if it goes wrong. I'd be grateful for a recipe if this is actually real.

We used to whip cream, dunk biscuits in alcohol, then coat them with cream to make a log of sandwiched biscuits. Left a few hours, the biscuits became softer and the cream firmer. You could do it in a bowl for the same effect I suppose?

I think we used ginger nuts and coffee liqueur.

Thank you, that sounds very familiar. My mum has just messaged me back and sge can't remember the non-alcoholic version, but she used Bailey's, bourbon biscuits or Oreos, and whipped double cream.

Yes i remember making this as a kid. Dunk choc chip cookies into orange juice. Pipe cream between each cookie and leave in fridge for a few hours. Must make it again and see if it is as good as I remember

I think we used ginger nuts and coffee liqueur.
My mum used to make this, I remember it being gorgeous! The recipe was originally from a Fanny Craddock cookbook, she still has the book (my Mum is 85!)

I think ours was ginger nuts, sherry and cream. But I may be wrong. Perhaps I should make it to check.

Bee, it's only got a lot of ingredients because they are home made biscuits.

i remember it being a very 70s dinner party dessert made with sherry i would use plainish biscuits else it could be a bit sickly ginger nuts are not my fave biscuits so that would be a no

I did one using ginger nut biscuits soaked in whiskey then sandwiched together with whipped cream then covered in whipped cream and left it in the fridge overnight. The biscuits go all cake like. It's bloody lovely.

Choc chip cookies soaked in juice from a tin of peach slices. When mushy add in the peach slices (halved), add a very generous splash of brandy (do a taste test and add more brandy if needed!), put into serving dish and top with softly whipped cream. Give it a few hours in the fridge before serving. Delicious!

The one I remember from my childhood, which my mum would make and take to parties, and which I now make from time to time, came from a Reader's Digest recipe, apparently. This is how we do it:

Maryland Cookies

Ingredients

  • Maryland Cookies (or other choc chip cookies)
  • Chocolate custard (can use normal custard and mix in some cocoa powder which has been blended with a bit of hot water)
  • Sweet sherry
  • Whipping cream
  • Chocolate shavings, to decorate

Method

  1. Dunk a choc chip cookie in sherry, smear a blob of chocolate custard on top of it, and put it in a dish. Repeat, layering up a dish with gooey, chocolatey cookies. Fill in any gaps between the cookies with chocolate custard.

If possible, cover and leave in the fridge for a day, for the cookies to soften.

  1. Just before serving, whip the cream and put it on top of the custard, and sprinkle grated chocolate on top.

Sounds like a good one for individual ramekins. A full size one is just too dangerous Grin. Bailey's sounds great, I've also got some coconut cream rum which with chocolate Bourbons, might work for a bounty chocolate effect.

Sandwich together 3 choc chip cookies with melted chocolate mixed with whipped cream and custard (otherwise it’s really hard to bite). Pour over sherry til absorbed. Add the whipped cream/custard mix on top. Sprinkle grated choc on top.

I'm low-carbing too, just not on here. I'm not going to eat the biscuits but I like to talk about them. Grin

So many variations of this! I think it must have been an orange juice one I remember.

We used to dunk ginger biscuits in pineapple juice, then whip the cream, fold in the pineapple chunks and use to sandwich together the soggy gingernuts.

Was delicious, but very very rich.
