Ideas for summer toddler meals

We have twin 2yos who eat reasonably well but I'm aware my repertoire is quite wintry, lots of stews and pies etc. I tend to batch cook and do things like fish pie, beef chili with extra veggies, shepherd's pie and so on. I am thinking ahead to when it gets hotter and wondering what you cook for your toddlers in summer?

Stir fry with noodles or rice, lots of rice and prawns.
Burger cut up in the bun (or bun on the side) with wedges and salad veg.
Fish cakes with mushy peas.
Chicken coupons with veg.
Fajitas - they can make their own if you prep it all in different bowls.

Oh yes, we did chicken fajitas the other day! Turns out they do not like salsa, as we found out when they spat it onto the floor Hmm but otherwise went for it.

Stir fry a good idea too.

I also make this pea and ham soup for mine quite a lot

Oh I wish mine would reliably eat soup - especially in the colder months. But will keep trying! Pea&Ham sounds delish.

Your lucky, mine were terrible eaters and are still fussy as adults - probably my fault for indulging them!

They won't have quiche - think it's a texture thing - but risotto and the tuna balls are good.

Typical week here for toddler looks like this..

Salmon drizzled with honey and baked in foil. Older DS likes soy sauce in with the salmon and honey but 2yo not a fan.
Chipolata sausages
Slices of cheese or ham omelette
Fish fingers (sometimes posh ones and sometimes orange ones)
Noodle stir fry
Meatballs with peppers and courgettes in Tom sauce
Chicken thigh fillets roasted with lemon
Bolgnase sauce
Terikayi chicken
Soft boiled eggs (often moans about this)

All served with rice, pasta or they like the mini crispy potatoes from the freezer (or oven chips!) and always 3/4 veg with it. Older DS is great with veg, eats anything - toddler not so much but hoping he'll eat more of it soon as big brother does.

I was going to suggest fajitas, they went down very well here last night!
Also quesadillas, frittata, filled jacket potatoes and salad.
Dh makes garlic and herb breaded chicken which they love, they had it kn Sunday with new potatoes and veg.
Nachos made by cutting up tortilla wraps into wedges (they like to do this with the scissors) then brushed with a little oil and baked. Topped with chilli, guacamole, sweetcorn and grated cheese. We put it all separate on their plates as they dont always like things mixed together.

We have a lot of flatbreads with various toppings and lots of salad.

My kids help with the flatbreads which are just equal amounts of self raising flour and plain yogurt then whatever flavouring you like, they're then shaped and fried. My younger children like to make theirs into people or animals etc.

We have Greek style with chicken marinated in yogurt, mint, lemon and coriander served with tzatiki or chicken in lime, coriander and cumin served with hummus or lamb mint and feta meatballs and salad
Moroccan style served with chicken or lamb tagine, or meat marinated in Moroccan spices, cous cous and fattoush.
Indian style with chicken or lamb marinated in whatever curry paste you like and yogurt served with raita and salad, we sometimes have garlic butter rice with this too,
Italian style with meatballs in tomato sauce covered in mozzarella,
Donner kebab style I use The Organised Mums slow cooker recipe,
Falafels with hummus and salad,
Halloumi with salad,
Mexican style with carnitas, we often have lime and coriander rice with this and fried peppers and onions.

Other summery (ish)meals we have include,
Fish cakes,
Kebabs,
Moussaka,
Fish lasagne,
Traybake thing with chicken breasts or thighs, new potatoes, carrots, leeks, shallots, thyme, rosemary wine and chicken stock,
Cajun chicken pasta
