Can any bakers help with a 1st birthday cake?

Hi! So it’s my daughters 1st birthday tomorrow and I promised myself I’d make the cake-now I’m regretting it ha ha!
I only have one 8 inch cake tin so I’ll have to make two cakes if you see what I mean then sandwich them together. I plan to cover them in buttercream but I was just wondering can I make the cakes today and wrap them in foil and then do the buttercream tomorrow? Or are there any surefire ways or tips to keep the cake nice and fresh until tomorrow? I’m going to do the buttercream tomorrow because I don’t have any cake tins or anything big enough to keep it in and I don’t just want to keep it sitting out on the countertop because it will surely go a bit hard? Thanks and hope that makes sense 🙈

I have DC turning 1 tomorrow as well.

I’m using this recipe shewhobakes.co.uk/classic-birthday-cake-recipe/

It’s for a 7 inch cake but there is a link to a converter on her website that will give you the amounts for 8 inch.

She actually recommends that you leave it over night until you ice it.

I usually make mine the day before then move my fridge shelves so it fits in.

I also started buying the butter cream and colouring it because it was too much work doing cakes buttercream and decorating. My excuse to myselve was birthday cakes are more about look than taste.

I've seen people put a sugar syrup on the cake then wrap in clingfilm and put in the fridge.

You can also wrap in clingfilm then foil and put in the freezer. Keeps it really moist.

My tip for a good cake is to weigh the eggs so they are the same amount as your flour etc.

Wrapping the cakes and saving until tomorrow is fine, I do that with birthday cakes.

Yes, baking today then wrapping in foil will be fine, make sure that the cake is completely cold before you wrap it up though.

I made fairy cakes for mine on their 1st-3rd birthdays because it’s more manageable for them to eat with their tiny hands.

If I'm celebrating the anniversary of pushing a watermelon out of my vagina I'm bloody well getting a slice of cake. They can blow out the candles but I know that the cake is mainly for me ;)

That’s brill, my DD is 1 in six weeks and I’m wanting to bake a cake too! First ever attempt, let me know how you get on with that recipe it looks nice and simple!
