My eggs are a month out of date but still not gone off, ie floating in a dish of water?

Yes they do go off but yours haven't. If they are not floating they are fine to eat, if worried just make sure they are cooked through.

I thought it was the other way around. If it floats its bad and if it sinks to the bottom it's good. Thsts what I learned on YouTube, anyway.

If its sinking it should be fine but to be safe crack them into a mug first so you can check them individually and then add them to pan. That way if one is bad you wont ruin the lot.. and believe me if its a bad egg you'll know very quickly

Older eggs are better for hard boiled eggs as it's easy to peel them.

I don’t think I’ve looked at an egg date for years. You know when they are off. My DP broke one once and it smelt so vile I puked. The smell lingered for ages.

I'm just surprised shops aren't allowed have longer expiry dates although it's probably better for them if people chuck them even if they're still good.

It's not that shops aren't allowed, they CHOOSE a short 'best before' date.

Although if you are making something that needs really fresh egg white eg meringue, straight from the hen egg white is much stiffer as it's absorbed less moisture through the shell so whips better. If I've shop bought eggs they're usually several days old when I buy them, whereas the egg farm they're laid in the last 24 hours and when you crack the egg open, you'll find the white stays together and isn't runny vs shop eggs the white runs everywhere

I don't know about the UK, but the expiration date on eggs in my country is for when they are stored out of the fridge so they are way off if you keep them in the fridge.

They do go off - I would never pay much attention to eggs even two weeks over, but beyond that I crack them into a separate vessel one by one and then add them to whatever it is I'm doing. If they've gone off enough to not eat them they'll stink or the white will be slightly green tinted. I've only ever seen a slightly weird white but have heard of people that have had sulphur dioxide heavy eggs.

Oh they’ll be fine for weeks and weeks past the date, especially if you refrigerate them.

All good. We have our own chickens so we always break into a glass before adding to the mix. But 6-8 weeks should be fine. It's the double membrane.

I buy eggs from neighbours who keep chickens. They don't have a date on!

Even when I have bought them in a supermarket in the past I have never ever looked at the date on an egg. As others have said, it's easy enough to know if they are off if you crack them into a cup or bowl

They don't even have a use-by date in China. They just have the date they were packaged and you can figure the rest out for yourselves.

I have hens and their eggs don't come date stamped but I do know eggs last for weeks and weeks so I would ignore date stamps on eggs and do the float test instead (even a freshly laid egg can be off on occasion).

It's because they are Beic Lion code eggs. They put lay plus 21 days as display until and lay plus 28 days for Best Before.
Best before is a quality indicator not a safety one.

The date on eggs is a Best Before date not a Use By date so not meant to be an indicator of safety, just that they might not taste as good after that date. They are generally safe to eat for many weeks after that date. The float test is the best way to test if they are safe to eat so you are good to go! Smile

You would know if they had gone off as soon as you cracked into one though, as the revolting sulphur smell would be overpowering!

Crack into a saucer before doing anything else with them. If they smell OK they’re fine to use.
I’ve often used eggs well past their dates.
