Spanish Speakers - Is there a popular cake or bread I could make instead of the good old banana bread

So everyone seems to be baking and making banana bread. I love all things Spanish and was wondering what the popular cakes, bakes, bread etc was in Spain and would have a go with my DS

When living in Barcelona, we used to love the ensaïmada Mallorquina, and now that we are in Sydney we do them at home.

Churros con chocolate - donut strips dipped in thick hot chocolate. A traditional breakfast dish. I love it, but it makes me want to go straight to sleep afterwards.

I've just had another common Spanish breakfast of pan con tomate. Not baking as such, although you could bake the bread, also good for using up stale bread, you can lightly toast it to perk it up a bit.

I had a tomato that was slightly past it's best so I cut off the mushy bit, removed the seeds, chopped it finely, added some garlic, salt and olive oil and mushed it into a sliced ciabatta roll.

Coca de llanda is a super traditional cake in the region I live in. It’s child-friendly for making with small hands, too.

Tejas (sort of flat biscuits) are also delicious, very traditional, and easy to make. They’re circular and when they’re still hot out of the oven you put them on wine bottles to cool so they curve over like roof tiles (where their name comes from). I live in ne Spain and its croissant type stuff really. Cake as such is not that Spanish. A lot of it is very sickly sweet after dinner cake instead of fruit.

Sorry, posted before I meant to - Bizcocho, cheese cake (it actually tastes cheesy, very different than what we eat in the U.K.), Magdalenas, flans, a cake I don't know the name of with a really wet base and merengue. They love their cakes!!

My Spanish DP just told me some others; Tarta de manzana, Tarta de Santiago and Tarta de almendra de Elche (traditional where we live).
