What can I do with a load of sautéd veg & mince beef?

I've used up all the veg in the fridge that needed using, courgettes, onions, leeks, bit of sweet potato etc and have some mince beef needs eating too. Should I just bung the beef in with the veg or do something different? Add anything else?

What can I do with a load of sautéd veg & mince beef?

I’d also turn it into cottage pie. Or cut the veg smaller and make bolognese

Whatever you end up doing, I'd remove the veg from the pan and fry the mince on its own before putting the two together. You need a higher temperature to brown it properly so the caramelised surfaces add flavour to the meal. Then you've got the base for whichever dishes other posters come up with.

I only have 2 tiny potatoes so not much chance of a cottage pie. I could make a short crust pastry tho

If you can make pastry than I would fry of the mince, mix with veg (add any herbs and spices you fancy) and then make pasties.

Fry the mince separately then mix in the veg. Cook some pasta and mix with the veg and mince, pop in an oven mix, top with cheese and make a mince and veg pasta bake.

Meatloaf would work really well too. When veg are cool, chop finely or blitz. From there you basically combine mince, veg, an egg and a couple of tablespoons of white breadcrumbs (or cooked couscous if short on bread). Add flavourings to taste I.e. black pepper, garlic, herbs etc. Bake in a lightly oiled loaf tin for about 45 mins. There is a great recipe on the Australian heart foundation website.

Frittata - pour in whisked eggs, cook until set on the bottom then put under the grill until golden brown.

Without mince:
Add stock and chopped tomatoes for some kind of ratatouille.
Add stock and blitz for tasty soup
Add stock cube and tomato puree for pasta sauce.
Make a:
Lasagne
Bolognese

I’d add curry powder, garlic, maybe a little bit of ginger and some tinned tomatoes.

Add the mince and then make into a pie with shortcrust pastry. Don't make the meat mixture too wet, but you can always serve with gravy on the side.

cmt1375 - Pasties are made with raw, finely sliced/diced meat and veg! Cooked for an hour. Not a way to use up leftover cooked veg!
