We used to use a deep fat fryer, but thinking of getting rid of it, so I’ve par boiled the potatoes they are steaming atm
I’m planning on letting all the stream get off them !
As I’m guessing that will help them get crispier
I have fat so was going to try and roast them in a small amount of butter ?!

Do you think this works best if you let as much steam as possible come off
Or any other tricks you use

I don't parboil. Just cut them, toss in oil, and put on oven tray (preferably with grease proof paper underneath but we've run out for the time being)

I find the secret is to try to have them all evenly sized.

OneIsAWorldOfBooks · 22/04/2020 16:40

I parboil, then loss them in oil, salt and pepper and stick on a tray in the oven for 30 mins or so. Turn them half way through.

Parboil, drain, salt and oil (I use sunflower oil) then leave to cool right down (so I par boil in afternoon, dress then cool til cooking at dinnertime). Then spread on large tray, into hot oven til done.

RuffleCrow · 22/04/2020 16:45

I heat the oil first in the oven in a deep tray for 10 mins, which is dangerous, but makes sure they crisp up rather than just absorbing it. I also parboil and let the steam come off first. Agree about even sizes and adding salt.

Slimming World chips - cut into chips, parboil for around 5 mins, shake to roughen the edges and then spray (or brush liberally if you are not following SW!) and put on a (foil-lined here) tray in the oven.

If you've got any seasonings you can sprinkle them over before putting them in. Depending on the potato type used, usually done in 20 to 25 mins.

RubbishQueen · 22/04/2020 16:46

I par boil for 4 mins. Heat up fat in a roasting tray for about 10 mins. Toss chips into hot oil and bake until golden and crispy. And delicious. I may be drooling...

RubbishQueen · 22/04/2020 16:47

And I may be having chips tomorrow. Wish you'd made this thread earlier OP! 😋

Francina670 · 22/04/2020 16:50

Yes par boil them first. Drizzling with garlic butter when hot adds a bit of an extra thrill

Doyouwantanothercuppa · 22/04/2020 16:50

Schwartz chip seasoning is a game changer.

NewName2020 · 22/04/2020 16:53

Cut chips, parboil for a few minutes, drain then shake in the pan to fluff them up, spray with spray oil and salt and pepper then cook in oven or actifry

Greenteandchives · 22/04/2020 16:53

I do the Slimming World method as above, but cook them on one of those weird ‘crisper’ trays from Poundland. I find it makes a big difference.
Lovely for sweet potato chips too.

I do the slimming world method too. I add a sprinkle of Schwartz chip seasoning as well.

Sorry do I’d take think it had posted.

Greenteandchives · 22/04/2020 16:55

Oh ffs.

Onehippoonthephone · 22/04/2020 16:56

Do you chip and parboil, or parboil then chip?

SnugglySnerd · 22/04/2020 16:58

I just cut them up and put in a lunchbox with some oil, salt, pepper and a pinch of paprika sometimes a few chilli flakes and/or sesame seeds. Lid on box and give them a good shake then tip them onto baking sheet, spread them out and put in hot oven for about half an hour. Better on baking paper because they stick. I do sweet potato ones the same way.

MyEnormousTurnip · 22/04/2020 16:58

I just slice up, toss in oil and onion salt then stick in the oven for 30mins. I’d never bother if I had to faff about parboiling. I don’t even peel them.

ClashCityRocker · 22/04/2020 17:00

Chip then parboil.

Steam off.

Leave the potatoes dry out for a wee while.

Beef dripping in the baking tray, get it nice and hot (like you would for say roast potatoes)

Pour over the melted hot beef dripping. Toss with seasoning (salt, pepper and paprika for us).

Put back in the oven, turning occassionally.

London1066 · 22/04/2020 17:03

I parboil them then toss them in a drizzle of oil, polenta, herbs and salt and pepper. They crisp up so nicely. Cook at 200 on parchment paper

We cook them at 220 for the last 10 minutes to crisp them more! Yum

myrtleWilson · 22/04/2020 17:03

Chip, par boil, steam off and let them dry

Toss them in semolina, salt, pepper (sometimes paprika if I'm following Ottolenghi) then into pre oiled/pre heated tray in hot oven

London1066 · 22/04/2020 17:04

And then serve with nandos peri peri salt Smile

Lardlizard · 22/04/2020 17:58

Well I fucked them up !
I’ll
Try a different way next time !

I bought an air fryer - it's definitely better than oven chips but healthier than a deep fat fryer Grin
