Daft question about parsnips!

Are they a vegetable? Or are they a potato/pasta/rice substitute in a meal? I'm starting to prepare lunch and I'm having doubts as to what they count as! How do you eat them?

A root vegetable. Only one real way to eat them for me. Quartered, brushed with honey and wholegrain mustard and roasted! Mmmmm......

usually as a vegetable but sometimes with ginger and treacle in a scrummy cake!

IMO they are only fit for the compost heap or animal fodder Grin. Their taste is truly vile to me.

They are a root vegetable, just like carrots or swede are. I wouldn't class them as a starchy vegetable like potato.

DS likes them roasted with Sunday lunch (but he's the only one).

For me the only way to use them up is in the River Cottage parsnip and ginger soup which is surprisingly good.

They're a vegetable (aren't they?) like carrots?

Parsnip and carrot soup is lovely! Use curry powder to spice it up a bit. I use 3 carrots to one parsnip with onions (look up recipes) and finish with chopped chives and cream. 😋

I do them roasted with honey and rosemary, in Rosti or roasted with spices then blitzed into a soup.

There weren't any in the supermarket on Saturday and I was planning to do parsnip and pancetta pasta - I'm very jealous of your parsnips! Grin

I just cut them lengthwise, take out any wooden core, drizzle with oil and roast them. Lovely. We had them roasted with carrots and sweet potato done the same way yesterday with roast beef and Yorkshire pud. Was deeeeelicious.

Def a veg of the root variety,
I agree with PP they are best roasted but they are already quite sweet so I don't use honey.
I also like them sliced very thin and fried in very hot oil = veg crisp

They are beautiful cut like chips, drizzled with maple syrup and bacon and roasted for hours . Come out all crispy and sweet/salty .

They're a carby veg. So if you have parsnips maybe not so much potato or whatever as you might otherwise have.

We had them roast with a roast dinner today. I roasted them with carrots as a vegetable.

They cook quite quick, especially if boiled, and can quickly fall apart. I'd say about 7 min. I used to mash them up with either potato, carrot or swede.

DH likes to have roast parsnips instead of potatoes with a roast dinner, so that it's filling but not as carby. And he never, ever resorts to munching on two bags of baked crisps afterwards, dear me, no,
