Flour in flapjacks?

Whathappenedtothelego · 19/04/2020 15:28

I've lost my flapjack recipe. I got it from a library book years ago, and I can't remember the title now.

I have been googling for a new recipe - the thing is I could have sworn the original recipe had flour in as well as oats (it also had dates and ginger).
They were amazing FLapjacks.

Does anyone know of any flapjack recipes with flour? Or could identify the original book? Or is my memory playing tricks?

I'd be so grateful.

Have you searched on MN? There is a really good recipe on here from a regular poster, includes condensed milk.

I have never seen a flapjack recipe with flour. Surely that would make it more of a cake (and stodgy).

No flour in any flapjack recipe I have ever seen. But I do like them made with bananas, not relevant I know...

Bestbe · 19/04/2020 18:28

Just Google a recipe. I've never seen one with flour. It's usually oats, sugar, syrup and butter in some combination. You can add other stuff like chocolate chips etc

Never known one with flour ever.

Littlefish · 19/04/2020 18:42

My flapjack recipe has plain flour in it. I'm just cooking at the moment, so will post it later - is that ok?

Littlefish · 19/04/2020 19:12

Right, here you go.

8oz butter
2oz syrup
1 tablespoon of water
2 x pinch bicarbonate of soda
4 oz plain flour
8 oz oats
8 oz sugar
Pinch of salt

Chocolate chips, chopped dates, chopped crystallised ginger, raisins, dried cranberries, chopped walnuts or whatever you want to add!

Melt the butter, syrup, water and bicarbonate together (I do this in the microwave)

Mix in the flour, oats, sugar and salt

Add any fruit, nuts, chocolate chips etc and stir.

Line a 10 x 8 inch tin with grease proof paper.

Cook for 35 minutes at 150 degrees.

Take it out of the oven and leave it to cool in the tin for a bit so that it holds together.

Remove from the tin before its completely cold and cut into pieces.

My collection of ancient Bero books have flapjack recipes with flour.

Made flapjack this afternoon. Have never used flour or water. Don't know whether to try recipe above or leave well alone. It is deliciously chewy.

SummerHouse · 19/04/2020 19:26

Can't be a flapjack thread without mention of @soupdragon
Just Google Soupdragon flapjack - it's the recipe with condensed milk. Hang on, will find it...

SummerHouse · 19/04/2020 19:28

Just throw in your dates and ginger. Enjoy....

250g porridge oats (the cheap type, not large ones),
150g Butter,
2 generous table spoons Golden Syrup
half a tin condensed milk,
100g demerera sugar
baking tin, no bigger than about 18cm x 28cm

Method: 1. Preheat the oven to 160 degrees c

  1. Line the baking tin with baking parchment.
  2. Melt the butter in a large saucepan over a medium heat and add the sugar and syrup. Keep gently heating and stirring until all is melted and mixed. If it starts to boil take it off the heat!
  3. Add the condensed milk and mix. Bring to the boil for about a minute.
  4. Remove from the heat and gradually add the oats, folding them in. All the oats should be coated, and the mixture quite dense, but still sticky. Don't add so many oats that the mixture becomes dry.
  5. Pour the mixture into the tins and spread about so that it lines the tin to a depth of 2-3cm. Don't squash the mixture in, just spread it evenly.
  6. Bake in the oven for about 15mins. You should take them out when they just start to go brown round the edges, don't leave longer than this. If they're still squidgy in the middle that's fine, they set on cooking.

I’m pretty sure Rachel Allen does a flapjack recipe with flour amongst the ingredients.

Nicklebox · 19/04/2020 19:43

Bero flour recipe book

Ariela · 19/04/2020 19:51

This is lovely

9oz butter not margarine for flavour, or mixture of both if need to do more cheaply
9oz sugar (any type but brown/demerara is best)
9oz golden syrup
Melt the above in a pan and mix well, then stir in
1lb 4oz oats - we find the Waitrose own brand ones really good + 4-6oz dried fruit/nuts of some sort if you want fruity flapjack or substitute more oats. Line 2 x 10x8 tins, squish mixture in & Bake at 160-180 gas 4 for about 20 mins till browning at the edges, cool in tin and cut up.

Whathappenedtothelego · 20/04/2020 09:18

Thank you!

I didn't have any condensed milk, but Dd and I made Littlefish's recipe above. It isn't quite the same (this is going to drive me mad trying to find it!) but I am happy to report that they were very well received by the whole family.
