So many different recipes online and I’ve had 3 failed attempts now! Dough too sticky, not rising at all etc.

I’ve got;
white bread flour
Fresh yeast
Salt
Oil/milk/water/sugar if needed- each recipe I’ve tried has mentioned something different!

Does anyone have a simple recipe using these ingredients that I can do please? No bread makers, and nothing that takes more than an hour to prove ideally.

@scootingthebreeze great thanks! Do you know how to substitue the dried yeast for the fresh yeast I have?

1¼ cups (300ml) cold water
2 tsp (10g) salt
7g fresh yeast (if unavailable, use ½ tsp (3g) active dried yeast or ⅓ tsp (2g) instant dried yeast)
4 cups (500g) strong bread flour, plus extra for dusting

^ there you go, with fresh yeast amounts. I make this weekly, it’s easy and reliable

@anneofcloves thank you! Will give that a go next.

From some research online I don’t think I have left my yeast long enough to activate for using it.

If you want it quickly I've made pizza bases with baking powder (or self raising flour if you're in the UK) loads of times. It's not gormet cooking but perfectly good for a quick activity/ meal with kids. In fact I stopped bothering using yeast for pizzas after I realised nobody really noticed the difference...

DS made this one yesterday (I think - it was from River Cottage Everyday but looks to be the same recipe) and it worked well. Double after about an hour left on worktop near the oven. He used the dough hooks on hand mixer rather than kneading by hand but the dough didn't look too wet.

i am doubtful about fresh yeast if its not rising.

I also use the one Scootingthebreeze posted and it turns out well I think.

Kitchendoctor · 19/04/2020 12:14

I’ve used this one a few times. It says you don’t need to leave it to rise but I do (for about 30 min to 1 hour)
It does feel quite sticky to begin with and I do find you need quite a bit of extra flour for the surface to stop it sticking while kneading.

I find oiling the baking sheet slightly is better than flouring.

3 cups bread flour, 1 cup warm water, 1tsp sugar, 1/2 tsp salt, 1 tbsp olive oil. Optional, dried herbs, chopped sun dried tomatoes, olives etc. Makes 2 pizza bases or use half to make a focaccia bread

okiedokieme · 19/04/2020 12:46

Sorry of course a sachet of yeast!!!

Myfriendanxiety · 19/04/2020 12:48

Thanks everyone- will give some of these a go. I think the fresh yeast I have isn’t any good- it isn’t foaming like the online videos tell me it should!

Will see if I can get hold of some dried yeast in the week.

I did a Greek yoghurt and flour recipe once that wasn’t too bad
