Can you share your best choc chip cookies recipes?

I want to make some but I am overwhelmed with the number of recipes available. I would like them to be unctuous and gooey like the supermarket ones. My favourites are white chocolate and raspberry. Can these be made with fresh raspberries? Please come and share your wonderful baking knowledge. Thanks.

I reckon you’d need dried raspberries. I’d imagine fresh would be too wet.

I tried to get dried raspberries but that was obviously a step too far for my small local supermarket! I would need to drive for 30 minutes to a bigger one and that is not happening right now.

My only tweak is that I’m not sure it needs the dark brown sugar. I think light brown or all caster may work better.

The important thing is not to cook them for too long, so you get the gooey middle - that can take a while to get right for your pan in your oven with your timer etc...

Have had success with chocolate, nuts, orange zest, and using a few oats and raisins. Not tried fresh fruit though - might be a bit "wet".

I don't have unsalted butter. I have salted butter or stork.

Either salted butter or stork would be fine - I use whatever is in the fridge that is suitable for baking.

These are my current favourite. They do need nerves of steel though, as they need to leave the oven looking seriously anaemic and "undercooked" to be perfectly soft and chewy...

I always use salted butter for baking, because that's what we have in. It really doesn't matter and many recipes call for unsalted butter plus a bit of salt anyway.

I use this one, which is good if you don't have golden syrup. Apologies for all the brand-name dropping. I just ignore this and buy everything from Aldi, including the 30 p a bar chocolate, which I just roughly chop.

I use this recipe and it turns out perfectly every time. Agree with not cooking them too long.

125g butter
100g light brown soft sugar
125g caster sugar
1 lightly beaten egg
1 tsp vanilla essence
225g self raising flour
200g choc chips (I tend to buy 200g of own brand chocolate & chop it up myself)

Heat oven to 180
Cream butter & both sugars together
Mix in egg & vanilla essence
Mix in flour
Stir in choc chips

Roll into balls and put them on a greased or lined baking tray

Cook for 5 minutes, then flatten them with the back of spoon & put them back in the oven for 2-4 minutes, depending on how gooey / crunchy you like them.

Take them out & cool on a rack. Don't forget they will harden as they cool.

I think that recipe is more or less the same as the one I posted Zis but what I do is shape the cookie dough into a log, wrap in clingfilm, chill it in the fridge for at least half an hour and then cut into 1 cm slices and bake.

But precisely how you do it doesn't really matter, just whatever you find easiest.

Also let them sit on the baking tray for a few minutes before transferring to a cooling rack, less likely to fall apart.

I will give them a try later with what I have. I am not sure I have vanilla essence but I do have loads of golden syrup. I also have either golden castor or normal castor sugar. I will tweak one of the recipes to suit.

They taste great. Exactly as I wanted. I used the recipe that @BarbaraofSeville posted. It works a treat and I didn't need to chill them before cooking. I have no patience for that!
