What's that secret bit on the bottom of a roast chicken?

That only MNers seem to know about. And where is it?

It's got a special name and apparently it's really tasty and the cook gets dibs on it along with the crispy skin etc

I can never find it and forget to ask on here until it's too late and I'm cutting the bird up.

Today I am organised - I have a chicken to roast tonight.

Not wet market Fare just a normal part of a chicken. I don't eat it as I find it too chewy/fatty but lots do. Nothing abnormal about it!

well if some of you are squeamish about the parson's nose then you'll bowk at me...I like to eat the liver, heart and kidneys left inside and crunch up the scaley skin on the bottom of the legs Grin

Hmm Right...
A wet market is an anglicism to distinguish between markets outside and markets in shops.

In Chinese, a 'wet' market is just 'market'. Maybe 'street market' if you really want to distinguish it. You could probably translate it to 'farmers' market' if you ignore the fact that British farmers' markets are full of poncy and over inflated priced items.

Maybe I should have added some emojis or exclamation marks to show my comment was 'lighthearted' I didn't really liken a Parsons nose with a skinned pangolin!

Thanks for all the explanations of a wet market! I was under the impression it was because the floor was often 'wet' from fish splashing around and blood from animals being butchered .. but hey, every day's a school day!
