Jazzing rice up? Fry?

What can I do to jazz rice up... Always boring really.

Am I missing a trick with frying it after boiling? Adding onion maybe? Peppers?. Any ideas.

You could cook it in stock?
I quite often boil rice while I'm stir frying onions, mushrooms, garlic, celery or whatever, then after draining the rice I add to the frying pan and stir it up together.
Particularly lovely with wholegrain rice.

Egg fried rice is nice. I use a bbc good food recipe. The secret is sesame oil, and a chopstick for the egg...

Egg fried rice is delicious and simply, once the rice is almost cooked put it in a frying pan and add a cracked egg, continuously stirring.

That's not the right way to cook egg fried rice.

Get oil very hot in a wok. Add the egg. It bubbles up if it's hot enough. Stir stir stir. Add cooked rice when the egg has cooked. Lots of soy sauce. Yum

The other night I felt the same, i was making burritos and didn’t just want plain rice. So I added a chicken stock cube, smoked paprika, cumin, chilli flakes, cinnamon & garlic powder and then just cooked it as normal - it was so tasty!!

You can cook normal rice in a similar way to risotto. Sometimes we have Mexican rice which I fry onion, pepper and garlic, add the rice and spices then add water and cook as normal. There’s lots of recipes on bbc good food to make rice a bit more interesting.

You could try Persian rice recipes - I like Sabzi Polo (traditionally served with fis), or rice and vermicelli.

You mentioned peppers - stuff them with the mice and they will be delicious. Add some chopped nuts, fresh herbs if you have it and a teaspoon of Cinzano, cayenne pepper or paprika depending on heat.

For fried rice, I would let it go cold first - spread out on a plate - before frying, otherwise it can be a bit sticky and mushy.

Pilau type rice is easy - I often fry some onion and finely chopped veg, then add some spices (cardamom pods, turmeric and a cinnamon stick), then the rice, couple of lime leaves, stir, cover with stock, put lid on, leave for about 15 minutes. It’s basically Nigel Slater’s Fragrant Rice from the 30 Minute Cook.

I boil mine in chicken stock until all absorbed them add cooked smoked bacon, tomatoes and onions and stir.

If having Chinese or Thai style dinner I grate a medium carrot into a bowl, throw in a handful of fresh peas, some spring onion, chopped peanuts (if the go with the meal) corriander if you like it. Then put the hot cooked rice in and mix it all through.

I always used to boil and then drain but have found it’s gorgeous rinsed really really well, boiled in 1.5 times the water to rice with the lid on for ten mins then steam for ten mins. Dot with butter and it’s delicious.

Look up Mary Berry Malay rice and also Penang rice. Both delicious using curry powder, soy, and various other things.

For egg fried rice the rice should be completely cold before adding to the hot oil.

Nasi goreng
Curry rice/Singapore rice
Jolof rice

I lived in China for a while and my only cooking facilities were 2 hob rings and a rice cooker. No microwave, no oven.
I cooked A LOT of rice!

Coconut rice! Add a tin of coconut milk and two tins of water to 250g basmati or long grain rice, with a pinch of salt and tablespoon of sugar, and boil until the liquid is all absorbed and the rice is fluffy (you may need to add a bit more water as it cooks).

Cook it the Persian way - wash it, parboil it, 5 minutes or so, drain. Oil the pan, heat and return the rice, add a splash of water and a large knob of butter and allow the rice to steam. I add saffron and raw garlic to mine. And I cheat to get the crispy tahdig bottom by using a bread wrap on the bottom of the pan

Jamaican rice and peas is a favourite in this house.

Bring a tin of coconut milk and a quarter of a cup of water to the boil, with a teaspoon of allspice, garlic and thyme, and some salt and pepper.

Add a cup of rice and turn the heat low for twenty minutes or until the rice is cooked.

Add a tin of rinsed kidney beans and leave them to heat through.

Delicious
