What are your favourite vegetables and how do you cook them ?

I admit I don't eat enough vegetables but tonight I shall be having broccoli and carrots with my fishcakes. Just boiled until tender then served with plenty of butter and a little pepper. Salt already in the butter. I also like mushrooms in various dishes, spring onions and fine green beans.

Not keen on sweetcorn and peas - I find both rather bland. Mushy peas and beetroot are the work of the DevilAngry. Many will disagree.

Carrots sliced and cooked in gravy in the slow cooker mmm

Try steaming veg rather than boiling. Makes then much better

Lettuce and peas à la Francaise, courgette grated and briefly stir fried with garlic, olive oil roasted asparagus, green beans à la Greque, spinach & leeks baked with cream, are some of my favourites.

Grated carrots with salt and a drizzle of olive oil
Stir fried sliced cabbage with garlic, sesame seeds and chilli
Second roasted broccoli, - delicious
Also roasted cauliflower is nice

Also delicious is a mix of
Cooled green beans
Chopped hard boiled egg
Chopped tomatoes
Finely chopped onion
And maybe some olives
With olive oil, balsamic vinegar and slat dressing

I think Onion is my favourite vegetable, boring but I like Red Onion raw in salad or fried and stirred into pasta

Red cabbage cooked by my mum 😁. She cooks it with apple & cinnamon - I think it's a Delia recipe.

Love almost all veg but dislike fruit.

Steamed broccoli with butter, salt and pepper- I can eat bowls of it.

Peas - we eat tons. Just microwaved.

Roast cauliflower or cauliflower cheese

Asparagus sautéed in butter

Carrots and parsnips roasted

Vichy carrots

Steamed fine beans, steamed kidney beans (but only when not stringy)

Mushrooms in any form but particularly baked field mushrooms with halloumi

Courgette sliced and fried in olive oil

Savoy cabbage steamed

I don’t like fennel, artichoke, chunky asparagus, mange tout or sugar snap peas, cooked spinach (but love it as a salad), chard

I love all veg, but my favourites are mashed swede (and using the water stock for gravy), honey roast parsnips and roast carrot. Favourite greens are sweetheart cabbage in butter with a bit of salt and pepper, and broccoli and cauliflower cheese. Oh and brussel sprouts with bacon and butter.

Spinach, just plain and lots of it!

Another for roasted broccoli, just olive oil and salt.

Love onions in all forms, fried especially.

Mushrooms fried in butter

Honey roasted parsnips

Swede chips

Spinach is quite versatile. Goes well with pasta and is good in curries and as a pizza topping. I believe spinach and the brassicas are highly nutritious.

I like roasted baby plum tomatoes and mushrooms (use a bit of butter) lovely with macaroni cheese or fish pie.

Brussels sprouts, slightly over-boiled, with butter and white pepper
Mashed swede
Sliced courgettes cooked in garlic butter
Steamed broccoli stalks
Asparagus with hollandaise
Globe artichokes with butter for dipping
Mushrooms cooked in bacon fat
Petits pois, just plain boiled
Cauliflower with grated cheese
Roast parsnips
Mangetout or sugar snap peas in a stir fry
Crispy kale baked in the oven with oil
Creamed celeriac

Peppers, stirfried with garlic. Or Padron peppers. Ditto pak choi.

Kale baked in the oven with olive oil.

Corn cobs, microwaved, and served just as they are.

Roasted Jerusalem artichokes or parsnips.

Sugarsnap peas, steamed.

Salsify and butter.

Brussels sprouts sauted with chestnuts.

Carrots roasted with mustard and honey.

Brussel sprouts, use up any leftovers by making a purée and warming through with a little cream and a grate of nutmeg.

Baby beetroot, boil and serve hot with a garlic yoghurt dressing.

Drumhead cabbage, cut into quarters through the whole head and base so the sections stay whole. Boil the sections gently till partly cooked, then drain very well. Arrange in a dish, one section is ample for one serving. Pour over cheese sauce so it seeps between the leaves a little, bake till hot & bubbling.
