Anyone got a decent veggie chilli recipe that doesn't contain beans?

Just that really. I hate beans but love a bowl of chilli. I used to use a lovely recipe but I've lost it now.

Anyone got a recipe they'd care to share? Must be veggie!

Can't you just leave beans out, or just use another vegetable instead?

Look for the burnt aubergine chilli recipe on BBC Good food website and just leave out the beans.

Could you just use diced mushrooms instead of beef? My usual chilli mix is paprika, cumin, oregano and cocoa powder.

Have you tried using quorn or tvp?

Otherwise I'd use peppers, onion, sweetcorn, sweet potato, celery and spinach maybe?

IKWYM though, I'm not a huge fan of beans either!

I also add sweet potato - roasted separately and added to the chilli a bit later. Adds a whole new dimension to a veg chilli.

What is it you like about chilli - the spices? The texture? Beans are pretty fundamental to the dish!

Yes, fry diced onion, peppers, celery until soft. Add 2 tsp garlic paste and 1 tsp Chipotle paste. Add tin of toms, tin of sweetcorn, diced sweet potato, tbsp brown sugar or maple syrup, heaped tsp smoked paprika (sweet not hot unless you want the chilli really firey). 1 cup hot stock (add more stock if necessary) simmer for 40 mins or do 4 hrs on high in slow cooker. The sweet potato will help thicken the sauce like beans do.
Also, If you don't have Chipotle paste use hot smoked paprika or chilli powder.

Thanks all! Will check out the recipes suggested. I love the flavour of chilli but just hate beans... I know beans are pretty important to the dish 🙈
I also hate quorn mince and tofu... picky I know!

Put aubergine and mushrooms in the food processor and give it a good buzz. Then let it sit in the air for 20minutes or so until it changes colour. Then use it like mince, it has a really good flavour and consistency. I also put onions, courgettes and bell peppers in the sauce with tomatoes and spices

Beans are absolutely not an important part of chili. They’re a disputed ingredient amongst chili aficionados. If you don’t like beans just tell everyone else they are doing it wrong and the original recipes didn’t have beans. Of course they were pretty insistent about the beef but you’re doing it your way and that’s ok.

Finely mince one carrot, 1 large celery stick and one onion and fry on a low heat in olive oil until soft. Set aside.
Chop one red onion and fry in olive oil. Add chopped garlic or garlic paste.
Add 2 chopped deseeded red peppers, I green pepper, one diced aubergine and 2 peeled, diced sweet potatoes.
Fry for a few minutes then add:
the set aside softened sofritta (minced veg),
one can of chopped tomatoes and one carton of passata,
1 heaped teaspoon of chilli powder,
2 heaped tspns of smoky paprika,
1 large square of 90% dark choc,
a splash of red wine,
2 tspns of oregano,
1 tspn of cumin,
2 heaped tspns of vegan bouillon powder.

If you like, add chopped chestnuts mushrooms and a diced courgette at this stage too. Simmer for half an hour, stirring often so it doesn't stick.

Serve with rice or baked potatoes or garlic bread.

I use this recipe which is beans, lentils and quinoa - you could replace the beans with veg - it has a good mix of textures, as well as a good flavour

There's an episode of Big Bang Theory where Raj's sister cooks "whatever this is" because Sheldon insists chilli doesn't have beans Grin

I use 'Meat the Alternative' soya mince ( it is the nicest)

I roast loads of onions and freeze in portions . (don't like raw onions in the Slo-Co)
Put roasted onions in the slow cooker, mince, Scotch Bonnnet chillis in passata tomato , some paprika, Lazy Garlic.
I do use red kidney beans , but if I forget, or run out , it's fine .
It cooks really nicely without attention.

Sorry, but it ain't chilli. Chilli is meat and beans. Veggie chilli is meat-substitute and beans. In a spicy tomato-based sauce.

What you're referring to is...spicy soup. Or sauce. Not chilli.

The bbc burnt aubergine veggie chilli that another poster suggested is just fabulous!!! I can’t stand kidney beans so I just replaced them with chick peas instead. Boom!! It was lush.
