Help exhausted-beef mince-standard veg/spices

Please help I can’t face churning out another spaghetti bolognese/chilli rice...I have the mince, bog standard fresh veg. Spices/herbs, pasta/noodles/rice. And tinned stuff
I’m exhausted from work, dh has had 3 kids for 3 weeks working from home any ideas 😘

Ginger and chilli crispy beef mince with rice? Fry beef for about 5 minutes until grey Grin then add chilli in any form, ditto ginger, soy sauce, a spoon of sugar or honey and a bit of coriander leaf and lemon or lime zest if you have it. Keep frying until crispy in places. Serve with rice and some steamed or stir fried veg (Carrot ribbons, broccoli, green beans, peppers etc).

I made a version of this but substituted things based on what I had in the fridge/cupboard and personal taste. I couldn't tell you exactly what
I did but it was very tasty!

It’s not massively different from chilli, but Picadillo is easy and nice. Especially if served with plantain.

Keema is easy and would make a change.
Cottage pie or mince and dumplings are always popular too, and are a good way to use up any bits of vegetables.

Meatballs with finely chopped onion, an egg, breadcrumbs and some grated cheese. Season the mixture well and check it by frying a tiny bit to taste. Stir fry vegetables with a dash of soy sauce and if you have it, sesame seeds or crushed roasted peanuts.

No time to read now but with those ingredients I’ve made in the last week -

  1. Galouti Kebabs with Pilau rice
  1. Keema Pilau
  1. Aloo Mattar Keema (curried mince potatoes and peas) with steamed rice

You’ll basically need Indian spices + ginger garlic and onion in some form

Dirty Cajun rice. I love it but use a 1/3 of the spices as it can be really strong. Don't always have spring onions or sweetcorn, and sometimes throw carrot in as well.

Also, sloppy joes. Doesn't sound appealing but tastes great. Serve them on burger buns or on top of chips with melted cheese. Loads of different recipes online

You can make sort of Indonesian style meatballs if you make a sauce of peanut butter, chilli, soy, ginger and some coconut cream to go with them. Add water as the sauce thickens, to get it as runny as you want. Kids like the peanut flavour, if you don’t make the sauce too hot with the chilli.

meatsheet - mix mince with grated/finely chopped veg (I made it today with carrot and cauliflower that I whizzed in the food processor), onions, garlic, breadcrumbs, egg if you have it, tomato ketchup and bbq sauce. Then spread it out in a sheet on an oven tray, about an inch thick. Can glaze with a mix of ketchup, bbq sauce and vinegar. Then cook at 190 for 20 minutes then under the grill for 5 mins.
