Recipes which reheat well

I’ve lost the will to live with everything relating to cooking, shopping and meal planning...please send help!

I need some dinner ideas which reheat well please. I usually eat with 3yo DS as DH is NHS shift worker so gets in at weird times but is inevitably starving! We like most things but do need to watch the budget and we’re happy to eat veggie. DS will not countenance potatoes weirdo but I can usually substitute rice for him. I also don’t mind a bit of faff, DS likes to help and I quite like cooking under normal circumstances. I have a well-stocked spice cupboard and am planning to play supermarket roulette tomorrow or Saturday so any inspiration gratefully received Smile

Does he like spice? Red lentil dhal with rice and naan bread is delicious, filling and really cheap to make. Here's the recipe - got it from someone on here yonks ago! It's pretty quick to make from fresh but is better the second day. I haven't frozen it before but from the fridge.

That might have been me! Came on to recommend that dal recipe. I freeze it in portions-it’s just as good as fresh.

Pretty much most curries and chillies are better cooked then reheated.

I'm so annoyed though - the kids and I love it, last time I made it husband admitted he wasn't really that keen. I should make a big batch to freeze really.

I make Rick steins makanwhalla. It's delicious, but even better the next day. Or even from frozen.

Quick version:
*Fry the onions long and slow in ghee (I've used oil, it's fine, just add a knob of butter) when they're done add grated ginger and garlic and fry for another minute.

Add 2 small cartons of passata and fill an empty carton with water and add that.
Bring to the boil and add salt, a spoon of sugar, ground almond (2 tbsp) and desiccated coconut (2 tbsp)

Add spices. Garam masala, ground coriander, chilli, turmeric, cumin and a pinch of cinnamon.
Now add any par cooked veg or cooked meat.

Simmer. Long and slow, stirring and adding a dash of water as needed.
Finish with a dollop of yoghurt and a splash of cream.

Yum

That Rick Stein recipe sounds yum and I’d forgotten about Goulash!
