What to do with 70grams of Rhubarb

Just picked rhubarb from a small tub in the garden. Only 4 good stalks weighing in at 70 grams. What can I make with it? Most crumble recipes are about 500 grams.

Mix it with other fruit, maybe frozen or tinned, to make a crumble.

Slice it and freeze it. We're having our 3rd crumble of lockdown this weekend.
Dh usually makes it into jam when my back is turned but he's not getting a chance at the moment.

I love rhubarb and once made rhubarb flapjack. Was a huge disappointment. A PP mentioned rhubarb gin- do you have a recipe that you have used before?

Turn 3 sticks into crumble and keep one.
Get a saucer of sugar and sit somewhere and dunk the rhubarb in, repeat till its all gone. Wink

Maybe a small compote? Then have with whatever. I think my yield will be similar! Tiny one person crumble?

Cook it in orange juice, sweeten it when cooked. Let it cool, stir through yoghurt, or similar.

Stew it, strain the juice and freeze it into ice cubes and put them in your gin

If you do about a third of the amounts in that recipe, it should work.
They make them at Nostell which is close to us from their homegrown rhubarb and are yummy

As PP have said, compote with ginger and/or orange juice would be lovely.

With yoghurt; over shortbread; as a tart sauce with oily fish...

Make a sponge mix - add in the chopped rhubarb, put in a tray (traybake size) and if you can be arsed- make a bit of crumble with some ginger in, chuck it on top of the sponge, bake in oven for 30 mins,
Get fat (fatter in my case as I've made this so often )

Stew it and then you have a choice: make overnight oats or mix it in plain or vanilla yoghurt or have it with ice cream
