Baking with duck eggs? Help!

Hello there

I've not managed to get any chicken eggs but I picked up some duck eggs. Does anyone have any bright ideas or recipes? I'm off to google but I thought I might ask here first.

Just use like chicken eggs. They give a lovely rich flavour to sponges.

They'll be fine - just remember they're bigger, so you might want to beat them up before adding, and just not put all in. Or if you're making a sponge, weigh them in their shells, and add the same weight each of butter, sugar, and flour.

Just use them like chicken eggs in baking, don't do scrambled eggs with them though. Make a lovely custard.

Make a baked egg custard with them, they make a delicious and wonderfully creamy custard. I also like them soft boiled with toast fingers.

Thank you all so much. I mad Nigella’s Chocolate Sheet Cake with them and it’s really nice.

I’ve been doing a lot more baking in lock down, although I am a bit of a beginner but have already find my Nigella cakes to work better than my Mary Berry.

No shade to the wonderful Mary, maybe it’s my oven Grin

We have pet ducks. The eggs are great for baking due to the slightly higher fat content.
