Peel, chop and freeze them, then you can use them in banana muffins or whatever when you feel like it. Also nice whizzed into milk as a thicker milkshake

That banana 'ice cream' is rubbish - you need about 3 bananas to feel like you've had anything, and then you might as well have had ice cream

Smoothies? Put bananas in food processor with any other fruit you want. Then add ice cream/yogurt/milk until you get the consistency you want. If just bananas then a dash of vanilla is nice to add variety.

I might make a banana and apple cake - but that's only 2 of the mouldy buggers used.

Banana pancakes go down well here. I'm pretty sure you could also freeze them and then just toast them to defreeze/warm up later:

Our standard "recipe" for four of us - DS can eat his own body weight, me, DH and DD are more restrained. This is fairly hit and miss in actual amounts and really doesn't matter much, you can play a bit

Approximately 6-8 heaped dessertspoons of self raising flour (bigger bananas means more flour).
2 ripe bananas, mashed
2 eggs
Milk
(I suspect you could use plain flour and a teaspoon of bicarb instead)

Whisk the flour, eggs and just enough milk to get a very thick smooth batter. Add mashed bananas and whisk in. Ideally, you'll land up with a drop scone consistency at this point. If it's too thick, add a little milk but as you're making them the bananas tend to release liquid so be cautious. Obviously, if too thin, whisk a bit more flour in but I've never had this.

Fry in batches in a little hot oil.

Variations: This is based on a friend's recipe but she uses coconut flour instead of regular flour.

We add peanut butter and mini smarties after, but you can whisk in in preferred flavourings to the batter as well - cinnamon, peanut butter, chocolate chip, blueberries etc.

This is what I usually make:

180 for about 30-40 mins - lovely and squishy cake (keeps really well in the fridge)

140g butter
140g caster sugar
2 large eggs, beaten
140g self-raising flour
1 tsp baking powder
1 apple
Loads of cinnamon
2 very ripe bananas

Second the advice to peel, chop and freeze them while you think of what to do with them.

I am planning to try this recipe with my frozen chopped bananas. Only I shall make one big crumble rather than four little ones, and increase the proportion of oats and decrease the proportion of flour (trying to eke out the flour).

I've never made banana flapjacks before! They sound like they'd be nice so I think we'll have a go at those.
