Onion soup recipe wants me to waste 275ml of white wine

Definitely not worth it on my opinion. Not that I’ve made it to know, but that’s a lot of wine wastage that I could be drinking Grin

I substituted wine for a few glugs of balsamic vinegar recently and it worked quite well.

When a recipe wants me to use white wine, I use about 25-30% as much sherry instead, & top up with a but more stock. Just cheap dry sherry. It keeps for quite a long time once opened, if you keep it somewhere sensible.

Not as things stand. Even though onion soup is the food of the gods. Use stock as OlaEliza said.

Sherry, expensive? I got a bottle in Morrisons recently for £4.85, for 750ml. I would probably use about 50-80ml in a big pan of soup, maybe 100ml if I wanted a really strong flavour. I did say, cheap sherry.

Onion soup is just as delicious without white wine in it. White wine is much less delicious with onions in it.

Good god no! The recipe I made recently called for 60ml which is much more sensible.

The majority of the flavour should come from the onions and good quality stock.

Not a waste at all - wine will give the soup depth of flavour and it won’t be the same without it.

You can pick up a bottle of wine in Aldi for £4.20. 275ml is just over a large glass and will cost you £1.54. It’s really not a big investment!

I use all stock for onion soup, but I do sometimes stir in a wee scoosh of brandy as well

yes you could just add a spoon of sherry, or teaspoon of brandy or even whisky. Or if the wine is also supposed to help sweeten the soup, a couple of spoons of grape juice and a couple of drops of wine vinegar

Takes far too long to do the onions, really annoying thing to cook if you do it properly. I know that's not what was asked Grin
