Cabbage and parnips - can I freeze these?

Ive got 2 massive parsnips and a big sweetheart cabbage.

Im going to make some coleslaw with the inner bits of the cabbage but can I blanch and freeze the rest.

And parsnips what can I do with those? We only really eat them roasted

I freeze roasted parsnips and carrots, Line them up on a baking tray and bag when frozen. Then just cook them like oven chips when you have a roast. I can't tell the difference between fresh and reheated.

Really cant freeze on a baking tray my freezer is full but I could do in batches I guess - thank you

roast the spuds and then mash up and freeze. Can either be eaten as parsnip mash or diluted with milk for soup.

Have you got any curry powder? Mary Berry has a fabulous soup a la reine recipe which is mainly parsnip and curry powder.
