Veg box delivery ...how to keep fresh

Had a veg box delivery on Sunday...carrotts, parsnips potatoes broccolli leeks butternut squash sweetheart cabbage green beans.

All still in box. How do I store never bought that much before!

Prepare and blanch/part roast/fry veg then freeze in portion sizes. Use in stews, soup etc

Many people might have used a large part of it in the first day, for a roast?
Then roasted the butternut squash with say coriander turmeric and cumin and fennel.

Or made soup. Or frozen the green beans for a mid week dinner say with steak pie?

Butternut squash last for ages so don't worry about them. Generally keep cool, dry and dark, in the fridge if possible and leave the root vegetables until last. Chopped leeks freeze nicely, broccoli and cabbage will get squishy.

Carrots, parsnips, potatoes, butternut squash will keep well anywhere fairly cool.

The others should keep well for quite a while in the salad drawer of the fridge. The other day I used up half a sweetheart cabbage that had been in the fridge for at least a week - it was fine. Ditto one leek that had also been there for some time.

If they’re not going to be used up soon, personally I’d blanch broccoli florets and green beans in boiling water for just a minute or two, and then freeze.

potatoes need to be in the cool and dark, ideally in one of those opaque cloth bags you get in Poundland (or Lakeland if you are made of money) but failing that a cardboard box in a cool place will do. Outside is cool at the moment if you have outside space out of the sun.

cabbage was traditionally preserved as sauerkraut, the only extra ingredient is salt. Plenty of recipes online.

Lakeland do bags which you put your veg in then into the fridge. They have something in them which absorbs the gas that fruit and veg produce when they start to mature thereby prolonging life. Might be worth a look? You can reuse and reuse them so not like you are going to chuck out more plastic.

Leeks keep for weeks in a fridge. Don't need to freeze them. Cabbage in salad drawer. What sort of beans? I think you can keep runner beans in a jug with just a little water at the stalk end.

Carrots are tricky, I find. Don't do well in fridge. I'd freeze or keep somewhere cool in the dark.
