Office lunch inspiration

As you can see from my other thread, I'm struggling with the monotony of meal planning and can onky recall about 3 meals whenever I try and plan.

I hate sandwiches. I find them dull and boring.
What do you take to work that isn't a huge amount of effort?
I would like to take leftovers but there isn't any by the time the family have finished.

Following !! I've started doing pizza bento boxes for daughter but I'm too hungry for those Haha

I do like potato salad though- yummy

If you have a microwave at work, baked potatoes are good.
Soup.
Cornish pasty/sausage roll (I buy them ready made, and eat them cold).
Slice of ham and egg pie.

I make a variety of salads most week for lunches at home and just take some of those with a few extra bits.
Tabbouleh topped with leftover cold meat. A few cherry tomatoes and grated carrot maybe.
Potato salad with green salad and a spare sliced sausage.
Quiche or onion tart and Waldorf salad.
Coronation chicken and rice salad.
A mini ploughman’s with homemade scotch egg, cheese, tomato and cucumber, gherkin, piccalilli and an apple.
Sometimes soup but our microwaves are usually splattered so I tend to avoid or take a flask.
I add a few olives, a piece of fruit or cheese and pineapple sticks, some nuts or whatever else is in the cupboard or fridge.

Fritatta- essentially a quiche without the faff of the pastry. Whisk some eggs, a little cream and/or cheese then throw in any leftovers. Ham, mushrooms, tomatoes, roasted veg, left over roast meat. Bake and slice. Serve with a salad, or heat.

Crumbed faux KFC chicken drumsticks or thighs- there are many recipes online for a crumb mix with tastes very similar to the KFC coating. Make a double batch, and buy double the chicken. Use it for your evening meal, then you'll have leftovers for work. (I'm currently on a keto, and there is a great recipe using ground almonds instead of bread crumbs)

After we've had a roast chicken, I boil up the carcass and make it into chicken noodle soup, chicken sweet corn or cream of chicken soup.

I buy a pack of bagels and will have them with cream cheese and jalapeños. It sounds weird but it’s lovely! Or get some pastrami, mustard and gherkins. Yum!
Make extra and plate up at the same time as dinner so there are leftovers. I’ve frozen a couple of dinners this week and I’ll have them for lunch next week.
I’ve been boring this week, I bought a loaf of tiger bread from Aldi and I’ve been having marmite on toast for lunch Blush

My current favourite is doing a slow cooker chicken on a Sunday and using the juice from the pot (with fat skimmed off) and the veg I cook with the chicken in for a soup. I add extra veg as well and its yummy!
