Meals that last a few days?

HI all. I could do with some meal ideas that reduce the amount of cooking I do. Particularly struggling with low/no meat ideas.
Ideas much appreciated!
So far we have shephards pie, curry, chilli. Anything else that I can eat 2 days in a row with one lot of cooking?

A new one I've discovered is noodle salad, keep dressing separate. To go with it, make a batch of chicken thighs marinated in soy sauce, honey, sesame oil. Both last in fridge for several days.

There’s such a lush chickpea recipe I make double/triple of and have over a few days.

You can have it on sourdough toast, or with hallumi on top, or with an egg on top (or all of the above plus avacado if you’re feeling lavish) as a main meal. OR you could have it as a side. OR you can have it just on it’s own.

I’ll post a photo of the recipe.

This is the chickpea recipe I was talking about. Don’t go over on the harissa as it blows all the other flavours out.

I’ve also attached a photo of a National Trust honeyed pork casserole that is easy to make, so nice with dippy bread and can be reheated the next day. I substitute the 100ml of cider vinegar with 100ml+ of cider and find it works much better. (I’m sure it’s incorrect!)

I make a meat free chilli con carne that takes 40 minutes. Chop onion and red pepper, put into backing tray/roasting tin and spread out. Sprinkle over paprika, smoked paprika, cumin, ground coriander, garlic powder about a teaspoon of each.
Cook in oven for 10 minutes gas 6

Then add, tin black beans, tin butter or white beans, and a tin of chilli beans in sauce and tinned tomato. Roast for 35-45 minutes

I don’t peel potatoes to mash, jyst chop and add to boiling kettle water, add kale, and carrots. Cook till tender and drain put back into pan and add lid to keep steam inside, sit for 5 minutes. Then mash with mighty force or put through masher.

Double up quantities and you’ll have 8 portions

So 4 nights food after cooking once

I realise this isn't meat free, but it does make several meals for us.

day 1: Whole, roast chicken (served with veg)
day 2: Chicken ceasar salad or chicken and avocado salad, or use the meat in a chicken/veg curry with rice
day 3: chicken noodle soup, chicken and veg soup or chinese chicken and sweetcorn soup
